Jeg liker å legge inn et fiskemåltid eller to i julen. Fisk er et deilig avbrekk fra all den feite julematen. I år står kveite på menyen. Denne flotte flyndrefisken er en riktig delikatesse, som gjør seg godt på de flotteste festbord. Det vanligste er kanskje å trekke kveita og servere den med Sandefjordssmør og glaserte gulrøtter. Jeg hadde imidlertid lyst til å lage en liten vri på dette. Derfor bakte jeg kveita i ovnen i stedet og serverte en fransk smørsaus ved siden av. Dette ble riktig så godt og kan absolutt anbefales – kanskje som en flott hovedrett på nyttårsaften.

Når man tilbereder fisk er det fort gjort at den kan bli tørr, dersom man ikke passer godt på steketiden. Men når fisken bakes i ovnen på lav temperatur, er sjansen for at resultatet til slutt skal ende med tørr fisk ganske liten. Derfor liker jeg å gjøre det på denne måten.

Ingredienser

  • 1 kg kveite i skiver
  • 1/2 dl hvitvin
  • 10 grønne pepperkorn
  • 1 ss smør
  • --
  • 1/2 finhakket sjalottløk
  • 2 ss fløte
  • 1 dl hvitvin
  • 100 gr kaldt smør
  • --
  • Sitron og persille til servering

Fremgangsmåte

  • Sett ovnen på 120 grader.
  • Skyll kveiteskivene godt under rennende kaldt vann og klapp fisken tørr. Strø med salt og knust pepper og legg i et ildfast fat. Hell vinen i og fordel smøret i like store klumper på hvert fiskestykke. Bak i ovnen i 15-20 minutter. Følg med på fisken underveis. Den er ferdig når den slipper benet i midten.
  • Mens fisken bakes lages sausen. Hakk sjalottløken og kok den i en kjele sammen med vinen. La det koke nesten inn. Ha i fløten og la det også koke litt inn. Pisk smøret inn i små biter av gangen. Her er det viktig å passe på temperaturen. Blir det for varmt skiller sausen seg og da er det i grunn bare å begynne på nytt. Jeg pleier å sette platen på laveste varme og ta kjelen av varmen litt innimellom for å være på den sikre siden.
  • Legg kveiteskivene på et fat og legg en tynn sitronskive over og pynt med et persilleblad.

Server med kokte poteter og aspargesbønner ved siden av.
