Pin

I dag har jeg laget brokkolisuppe av en brokkoli som hadde begynt å bli litt gul i kantene. Suppen fikk en fin mild smak av brokkoli. Med en liten klatt rømme og litt ristede solsikkekjerne ble det riktig så godt. Det er kanskje ikke et helt måltid i denne suppen, men den er super som forrett eller et lite mellommåltid.

Ingredienser

  • 1 brokkoli
  • 1 liten løk
  • 1 ss rapsolje
  • 1 l vann
  • 1 terning grønnsaksbuljong
  • rømme
  • 4 ts solsikkefrø

Fremgangsmåte

  • Finhakk løken og fres den i oljen til den blir blank og myk.
  • Hell på vann og ha oppi buljongterningen.
  • Skjær brokkolien i små buketter. Skrell stilken og skjær den i småbiter.
  • Ha oppi stilkbitene og kok til de er myke.
  • Tilsett brokkolibukettene og kok til de er møre, men pass på å ikke koke for lenge, for da mister de fargen.
  • Mens suppen koker, rist solsikkefrøene i en stekepanne med 1 ts olje til de får litt farge. Legg over på et stykke kjøkkenpapir.
  • Når alt er mørt i suppen kjøres den glatt med en stavmixer eller i en blender.

Server  suppen varm med en klatt rømme og et dryss med solsikkefrø.
