Jeg må innrømme at det greske kjøkkenet ikke er blant mine favoritter, men det finnes heldigvis noen skikkelige godbiter der også. Og moussaka er altså en av disse. Tzatziki og gresk salat er to andre favoritter, og faktisk går det fint å servere alle tre i det samme måltidet. Men altså moussaka, som helst skal lages med malt lammekjøtt, aubergine og kanskje også kanel, har greid å sjarmere seg inn i mitt repertoar. Min variant er riktignok med karbonadedeig, men det har vel så mye med tilgjengelighet å gjøre som smak. Kanelen står jeg glatt over. Det smaker rett og slett litt underlig synes jeg. I oppskriften skal tomatene flås, hvordan det gjøres har jeg beskrevet i posten om fylte paprikaer.

Oppskriften har jeg hentet fra kokeboken «Lekre retter fra middelhavslandene». Den er fra en gang på 80-tallet og var en av de første kokebøkene jeg kjøpte. Oppskriften nedenfor er endret litt i forhold til den i boken. I originaloppskriften er det tre tomater og 2 ss tomatpure. Siden jeg ikke hadde tomatpure i skapet, men rikelig med gode tomater brukte jeg derfor bare mer tomater. Det er også kanel i den opprinnelige oppskriften, men som nevnt er det noe jeg ikke er så begeistret for, og dermed utgikk det i min versjon.

Ingredienser

  • 3 auberginer
  • 1 hakket løk
  • 2 fedd finhakket hvitløk
  • 400 gr karbonadedeig
  • 5 tomater
  • 1 ss finhakket persille
  • 1,5 ts tørket oregano
  • 1,5 dl rødvin
  • 50 gr smør
  • 5 ss hvetemel
  • 6 dl melk
  • 50 gr revet parmesan
  • 2 egg
  • salt og pepper

Fremgangsmåte

  • Begynn med å skjære auberginene i tynne skiver på langs. Dryss dem med salt og la dem ligge en halv time. Det trekker ut fuktighet og bitterstoff av auberginene. Skyll deretter av saltet og klapp aubergineskivene tørre med kjøkkenpapir.
  • Stek aubergineskivene i en stekepanne. De suger fett som svamper, så en teflonpanne er å anbefale, for da er behovet for fett ikke så stort.
  • Flå tomatene og grovhakk dem.
  • Fres den hakkede løken og hvitløken i oljen og tilsett karbonadedeigen når løken har blitt blank.
  • Stek til kjøttet har blitt brunt.
  • Tilsett tomater, oregano, persille og vinen.
  • La det koke i ca. 15 minutter. I mens lages den hvite sausen ved å smelte smøret og røre inn melet. Spe med melken litt etter litt. Dette blir en temmelig tykk saus. La den koke noen minutter.
  • Ta kjelen av varmen og la sausen avkjøles litt. Rør inn de to eggene ett om gangen.
  • Legg ett lag med aubergineskiver i bunnen av et ildfast fat.
  • Ha på halvparten av kjøttsausen og legg på et nytt lag med aubergineskiver.
  • Legg resten av kjøttsausen oppå, og deretter resten av aubergineskivene.
  • Hell over den hvite sausen og dryss over parmesan.
  • Stek i ovnen i 45 minutter på 190 grader.

Server varm med en salat, gjerne gresk, ved siden av. Godt brød og tzatziki ved siden av er også godt.
