Denne oppskriften er en variant av en oppskrift i en av mine aller første kokebøker – Lekre retter fra Middelhavslandene. Kokeboken er vel omtrent 20 år og mye har skjedd på matfronten siden da, men oppskriftene i denne boken er stadig gode. Og en av mine absolutte favoritter derifra er fylte paprikaer.

Det tar egentlig litt lang tid å lage denne retten på en hverdag, men det er etter min mening verdt det. Dessuten kan den lages kvelden før og bare settes inn i ovnen når jeg kommer hjem fra jobben.

Bruk røde paprikaer. Jeg synes de er de langt beste til denne retten. De røde paprikaene er søtere enn de grønne og som regel har de tykkere fruktkjøtt også. Når det gjelder tomatene i denne retten, må det være friske tomater som brukes til kjøttsausen. Det gir en helt annen smak og konsistens enn hermetiske tomater. Om de må flåes er en annen sak. Jeg gjør det fordi jeg ikke har lyst på å ha tomatskinn i kjøttsausen, men det har nok ikke noe å si for smaken eller konsistensen for den saks skyld.

Når du skal ta skinnet av tomatene, skjær da et lite kryss på toppen av tomatene og legg dem i kokende vann i ca. 30 sekunder. Ta tomatene opp og legg dem over i kaldt vann for å stoppe kokeprosessen. Ta tomatene opp av det kalde vannet og trekk av skinnet. Hakk tomaten i småbiter.

Ingredienser

  • 400 gr. karbonadedeig
  • 4 tomater
  • 1 liten løk, finhakket
  • 2 fedd hvitløk, finhakket
  • ½  ts paprikapulver
  • 1 ½ dl kjøttbuljong (ferdig blandet ut)
  • 4 røde paprikaer
  • 2 ss olivenolje
  • Salt og nykvernet pepper
  • 1 boks tomater
  • 16 skiver gulost

Fremgangsmåte

  • Brun karbonadedeigen sammen med løken, og hvitløken i olivenoljen.
  • Tilsett krydder, tomater og buljongen og la det koke i ca. 20 minutter.
  • I mens skjæres paprikane i to på langs og stilk og frø fjernes.
  • Legg paprikaene i en ildfast form og hell innholdet fra tomatboksen rundt.
  • Fordel kjøttet i de halve paprikaene, og legg to osteskiver over.
  • Stek i ovnen ved 200 grader i ca. 30-40 minutter.

Servé med ris og salat.
