Pin

Bruschetta er en populær smårett, og ofte tenker vi nok på den varianten med tomat og basilikum. Men det er veldig mye annet man kan ha oppå de små loffskivene. Et forslag til alternativt fyll er nettopp bruschetta med aubergine og feta. Den bakte auberginen  blir nesten litt søtlig og passer perfekt sammen med den salte og litt stramme fetaosten. Litt sjalottløk som får ligge noen minutter i rødvinseddik gir ytterligere en dimensjon til denne toppingen.

I Italia er det vanlig å by på noe å bite i ved siden av et glass med vin, og hvorfor ikke gjøre det her hjemme også. Eller du kan servere den som en lett forrett. Et par tynne loffskiver med aubergine og fetarøren på toppen vil virkelig vekke smaksløkene og gjøre dem klare til resten av måltidet.

Ingredienser

  • 2 små auberginer (eller 1 stor)
  • 4 ss olivenolje
  • salt og pepper
  • 2 sjalottløk, finhakket
  • 1bunt persille, finhakket
  • 70 gr. fetaost, delt opp i småbiter (bruk hendene og ikke kniv slik at det blir ujevne biter)
  • 1-2 ss rødvinseddik

Fremgangsmåte

  • Skjær auberginen i små terninger og bland dem med olje, salt og pepper i en ildfast form.
    Bak dem i ovnen ved 220 grader i 45 minutter, eller til de er møre men ikke inntørket eller brente.
  • Rør av og til.
  • Hakk løken og legg den i sammen med eddiken i 10 min. Det gjør at løken blir litt mindre sterk i smaken.
  • Når auberginen er avkjølt litt, bland den med resten av ingrediensene og smak til med salt og pepper og eventuelt mer eddik.
  • Legg blandingen på ristet loff eller landbrød, drypp litt god olivenolje over og server.
