Aubergineprué er et populært tilbehør hjemme hos oss. Det er kanskje særlig til lam at vi har brukt det, men puréen er nydelig til all slags mat, både kjøtt, fisk og fugl. Til forskjell fra baba ganoush har ikke denne pruéen noe røyksmak, bare en silkemyk, kremete smak og konsistens. Jeg skal være den første til å innrømme at auberginepuré kanskje ikke ser så pen ut med sin brun-beige farge og litt klumpete konsistens. Med det oppveies altså til fullt monn av den gode smaken.

Jeg baker auberginene i ovnen til de er helt myke og faller sammen. Dersom du ikke har gjort dette før, så må jeg bare opplyse om at det er helt NØDVENDIG  å prikke hull i auberginen før den legges inn i ovnen. De første gangene jeg lagde denne puréen gjorde jeg ikke det. Og den siste gangen jeg ikke gjorde det eksploderte auberginen da den kom ut av ovnen. Det var aubergine over alt. Det var jo så sin sak, men auberginekjøttet var glovarmt og jeg fikk litt på meg som ga meg et lite brannsår. Ikke så farlig for meg, men kunne vært riktig så ille om det hadde truffet Tuppen som var baby da og lå og sov i kurven sin på gulvet. Fuktigheten inne i auberginen utvider seg i varmen og med et sterkt skall kan auberginen bli en regelrett granat. Så nå er du altså advart.

Jeg synes imidlertid ikke denne lille historien skal hindre deg i å prøve denne til grillmaten din neste gang, eller et stykke stekt fisk for den saks skyld. For bortsett fra dette lille crux’et med å  prikke hull i auberginen før den går inn i ovnen, så er puréen enkel å lage og som sagt veldig god.

Ingredienser

  • 2 auberginer
  • 2 fedd hvitløk
  • salt og pepper
  • 1 ss sitronsaft
  • 1 ss olivenolje

Fremgangsmåte

  • Sett ovnen på 230 grader.
  • Prikk auberginene med en spiss kniv og stek dem i ca 45 minutter til de blir helt myke og faller sammen.
  • Ta auberginene ut av ovnen og skrap ut innmaten og hakk den ganske fint (du kan evt. bruke stavmixer om du vil ha en helt glatt puré).
  • Finhakk hvitløken og varm oljen i en liten gryte på middels varme og stek hvitløken til den har blitt myk.
  • Ha oppi auberginemosen og varm opp.
  • Smak til med salt, pepper og sitronsaft.

Tips

Denne oppskriften er lett å lage til mange. Beregn ca. 1 aubergine pr. person og gang de andre ingrediensene opp. Det høres kanskje mye ut, men etter at den kommer ut av ovnen er fruktkjøttet falt sammen og det er ikke så mye som man skulle tro igjen da.
