Vi har vært en del ganger på ferie i Italia, og det er jo ikke til å komme bort fra at det er god mat der. En tur dit kan fort bestå av en lang rekke deilige måltider der gode råvarer står solid plassert i sentrum. Jeg liker godt at det ikke nødvendigvis skal være så fancy hele tiden. Kjærlig behandling av god mat rekker som oftest i lange baner. Jeg er også begeistret for at de bruker så mye urter. Det er en enkel og billig måte å heve mang en rett på.

De bruker basilikum til tomatene, oregano på pizzaen, merian på svinekjøttet. Og så har de den gode vanen å bruke rosmarin i brød og kjeks. Focaccia er en klassiker og det er også grissini – begge med salt og rosmarin. For noen år siden kjøpte jeg i en alminnelig dagligvarebutikk på landsbygda i Toscana noen kjeks med salt og rosmarin. Det var vanlige tørre kjeks, men de smakte helt herlig. I løpet av kort tid var hele pakken spist opp som snacks. Siden den gang har jeg vært på utkikk etter slike kjeks. Jeg har ikke funnet noen som jeg synes er gode, og da var det jo bare ett alternativ igjen – nemlig å lage dem selv.  Jeg rådspurte min gode venn Google, og fant en oppskrift her.

Resultatet ble deilige rosmarin og havsaltkjeks som passer ypperlig sammen med litt smakssterke oster, eller altså bare å spise, kanskje med et glass vin ved siden av.

Ingredienser

  • 6 dl hvetemel
  • 1 1/2 dl fint sammalt hvetemel
  • 1 ts salt
  • 2 ss god olivenolje
  • 1,5 dl vann
  • 3 kvister rosmarin
  • 1 ts flaksalt

Fremgangsmåte

  • Sett ovnen på 22o grader.
  • Bland mel og salt i en bolle. Arbeid olivenoljen inn i deigen og tilsett vannet litt etter litt.
  • Kna deigen til alt er samlet til en klump.
  • Del deigen i tre emner.
  • Dekk to av dem til med litt plastfolie mens du kjevler ut det første emnet på en lett melet overflate.
  • Kjevle deigen ut tynt (2-3 mm).
  • Stikk ut ut kjeks med et glass eller en kjeksutstikker. Fortsett med de to neste emnene.
  • Finhakk rosmarinen og bland den med saltet.
  • Pensle kjeksene med litt olivenolje og dryss over litt av rosmarin/saltblandingen.
  • Stek i 8-10 minutter til kjeksene har blitt lett lysebrune.
  • Ta ut av ovnen og la dem avkjølse på en bakerist.

Oppbevar dem i en kakeboks. De holder seg godt lenge.
