Insalata caprese, eller salat fra Capri om du vil, er en skikkelig sommerschlager. Jeg elsker italiensk mat. Det er noe der jeg oppfatter som ærlig og ujålete. Råvarene kan være enkle, og det kan tilberedelsen også være. Men råvarene må være av ypperste kvalitet. Mer enn mange andre retter, gjelder det for denne enkle salaten. Den har kun tre ingredienser, men er ikke de bra, blir heller aldri resultatet bra. Denne salaten kan stille seg i skammekroken om ikke tomtene er knallrøde, fulle av sol og varme. De må ha den rette balansen mellom søtt og syrlig. Etter min mening går det derfor ikke an å lage denne salaten i store deler av året. Det er en salat for høysommer.

Det var tomatene, og så noen ord om osten. Det var temmelig mange år jeg trodde jeg ikke brø meg noe særlig om mozzarella. Den litt gummiaktige, smakløse osten var ikke noe jeg synes kunne brukes til noe annet enn varm mat. Men dette var før jeg smakte mozzarella av bøffelmelk. Det er noe helt annet. Den har en helt annen konsistens – den er slett ikke gummiaktige, men myk. Den har også en smak, en mild svak litt syrlig smak. Lenge tenkte jeg at forskjellen nok ikke var så stor mellom osten laget ev kumøkk eller bøffelmelk. Derfor kunne jeg like så godt velge det billigste alternativet. TABBE  – det er forskjell. Faktisk så stor forskjell at den ene er verdt sine penger, mens den andre er det ikke. Vil du ikke betale for den dyreste kan du la være og servere tomatsalat i stedet. Sånn, da var det sagt. Et godt kompromiss er å redusere mengden ost.

Og så var det oljen og eddiken, da. Jeg tror du har skjønt tegninga nå. Velg de beste råvarene du har råd til. Jeg mener ikke at du på autopilot skal velge det dyreste i hyllen, men det er forskjell på god og dårlig kvalitet, og oftest (men ikke alltid) er prisen en indikasjon på kvalitet. Ett viktig unntak er grønnsaker i sesong. I sesongen er grønnsaker bedre enn i resten av året og de er billigere også.

Ingredienser

  • 6 store tomater
  • 2 bøffelmozzarella
  • Basilikumblader
  • Salt og pepper
  • Olivenolje
  • Balsamicoeddik

Fremgangsmåte

  • Skjær tomatene i skiver. Gjør det samme med mozzarellen.
  • Dander på et fat sammen med basilikumblader.
  • Ringle oljen over salaten og drypp over eddiken. Det skal ikke mye til, her skal tomatene og osten få spille hovedrollen.
  • Dryss flaksalt og dra noen omdreininger med pepperkvernen.

Server gjerne med godt brød ved siden av.
