Ja, ja. Kalenderen viser fortsatt juli, men jeg sitter inne mens regnet siler ned ute. Det er hele 13 grader og lite som minner om høysommer. Heldigvis vitner utvalget i butikken om hvilken årstid det er. I går var først dag hjemme på kjøkkenet etter tre uker på reisefot. Vi har besøkt Liguriakysten, Côte d’Azur og Stavanger. Mer om dette siden – kanskje. Det er fortsatt ferie her, og hjemkomsten til mitt eget kjøkken hvor jeg har alt jeg trenger og jeg vet hvor alt er, måtte selvsagt markeres med et festmåltid.

I fiskedisken fant jeg dagsfersk breiflabb og i grønnsaksavdelingen fristet noen fine kantareller, og dette ble utgangspunktet for middagen.  I fryseren hadde jeg litt blåskjellkraft fra en gang tidligere i sommer vi hadde blåskjell marinara. Når man damper blåskjell får man en fantastisk kraft full av gode smaker. Dersom det blir noe igjen av kraften etter et blåskjellmåltid, pleier jeg å fryse den ned. Kraften er ypperlig å bruke som base til sausen når det står fisk på bordet. Kraften kokt inn sammen med litt fløte kan nesten ikke bli en bedre og enklere saus.

Ingredienser

  • 400 gr breiflabbhale i skiver
  • salt
  • smør til steking
  • 1/2 agurk
  • 100 gr kantareller
  • det lysegrønne på en purre
  • 2 dl blåskjellkraft (se over)
  • 1 dl kremfløte
  • 6 agurkurt eller andre spiselige blomster
  • --
  • ferskpoteter

Fremgangsmåte

  • Sett på potetene.
  • Rens kantarellene og stek dem i smør. Sett til side og hold varme.
  • Lag kuler av agurken med et kulejern. Har du ikke det kan du lage terninger.
  • Snitt purren i tynne strimler.
  • Kok blåskjellkraften inn til det halve, og sil den slik at det ikke er rester av løk eller urter i kraften.
  • Tilsett fløten og la det koke over lav varme til sausen tykner.
  • I mens, salt fisken godt.
  • Stek den i smør i 3 minutter på den ene siden på middels varme. Snu fiskestykkene og stek videre til fisken så vidt slipper benet. Kanskje 2-3 minutter, men det avhenger av tykkelsen på stykkene.
  • Mine stykker var ganske tynne (2 cm).
  • Kok litt lettsaltet vann i en kjele. Ha oppi agurkkulene og la dem koke i 2 minutter. Etter ett minutt has purrestrimlene oppi. Når koketiden er over helles vannet av.
  • Dander agurk, kantareller, blomster og purre på tallerkenen.
  • Hell saus i midten og legg på fiskestykket.

Server straks med kokte ferskpoteter og gjerne et glass hvitvin ved siden av. Vel bekomme.
