Blåskjell er en favoritt i familien vår, og som regel blir skjellene tilberedt på den klassiske måten med løk, hvitløk og hvitvin – blåskjell marinara. Men i dag hadde jeg lyst til å prøve noe annet. I kjøleskapet var det chili, ingefær og lime og i spiskammeret fant jeg en boks med kokosmelk. Så da ble det blåskjell med tydelig thailandsk inspirasjon. Og det er jo slett ikke så dårlig.

Etter å ha feriert i Thailand flere ganger, er jeg blitt veldig glad i thaimat. Det er etter mine begreper mat til å bli glad av. Det er gode smaker, flotte farger og  en særegen balanse mellom surt, salt, søtt og sterkt. Dessuten gir en utstrakt bruk av krydder og urter en friskhet til maten. Altså, mat til å bli glad av.  Dessuten er det jo ganske så sunn mat.

Ingredienser

  • 1 kg blåskjell
  • 1 løk finhakket
  • 2 fedd hvitløk finhakket
  • 3 cm ingefær finhakket
  • 1 rød chili
  • 3 toppede ts red chili paste
  • 1 boks koksomelk
  • saften fra 1 lime
  • 2 ss fiskesaus
  • 1 ss sukker
  • olje til steking
  • --
  • 1 brokkolibukett

Fremgangsmåte

  • Begynn med å finsnitte løken, hvitløken, chili og ingefæren og skrubb blåskjellene rene.
  • Varm litt olje i en stekepanne og fres løk, hvitløk, chili og ingefærtil de blir blanke og litt myke.
  • Tilsett chili paste og fres i et par minutter til.
  • Hell i kokosmelken og rør til alt er godt blandet smak til med limesaft og fiskesaus.
  • Ha blåskjellene oppi og sett på lokket.
  • Rist av og til på gryten.
  • Retten er ferdig når blåskjellene har åpnet seg. Pass på å ikke koke for lenge, da blir blåskjellene tørre og kjedelige.
