Jeg var så heldig å bli invitert til Taste of Oslo festivalen som gikk av stabelen for første gang denne uken. Der var det mye god mat. Ett av høydepunktene var en litt moderne variant av tilslørte bondepiker som Oro serverte. Og siden jeg brukte formiddagen i dag  til å lage eplemos, passet det bra å lage nettopp tilslørte bondepiker til dessert. Her kommer min variant – inspirert av Oro.

Min variant av denne klassiske desserten er at jeg har supplert eplemos, brødsmuler og krem med en karamellsaus. Kremen er dessuten erstattet med kesam. Det gir en litt mer syrlig og dermed friskere smak. For ytterligere å gjøre desserten friskere en vanlige tilslørte bondepiker har jeg også små eplebiter i.

Tilslørte bondepiker er for resten et godt eksempel på hvordan man kan utnytte de ressursene man har maksimalt.  Og hvordan det  faktisk kan bli veldig god mat. Til denne desserten har jeg bruk epler fra hagen, gammel loff og en pakke vaniljekesam som snart var i ferd med å gå ut på dato. Har du ikke epler i hagen, går det fint med de man får kjøpt i butikken også. Du kan selvsagt også bruke ferdig eplemos på glass. Brødsmulene kan erstattes av griljermel eller smuldret kjeks.

Ingredienser

  • 4 dl eplemos
  • 1 beger vaniljekesam
  • --
  • 2 dl loffsmuler
  • 2 ss smør
  • 2 ss sukker
  • --
  • 1 dl sukker
  • 1 dl kremfløte
  • 1 ss smør

Fremgangsmåte

  • Du kan lage eplemosen selv, eller kjøpe den.
  • Begynn med å lage loffsmulene. Riv loffen på rivjern eller skjær i små biter som finhakkes med en stavmixer.
  • Smelt smøret i en stekepanne og rør inn sukkeret og brødsmulene.
  • Rør til brødsmulene har blitt gylne og fått en karamellsmak. Sett til side og la dem avkjøle seg.
  • Lag karamellsaus ved å smelte sukkeret i en tykkbunnet kjele på middels varme. Ikke rør i sukkeret før det har smeltet. Du kan evt. riste litt forsiktig på kjelen.
  • Når sukkeret har smeltet og fått en karamellaktig farge tilsettes fløten. Pass på, karamellisert sukker er uhyre varmt, og når fløten blir helt oppi gryten kan det sprute.
  • Rør til sukker og fløte er helt blandet.
  • Ta gryten av varmen og rør inn smøret.
  • Sett sausen til side for å kjøle seg ned.
  • Skjær eple i små terninger.
  • Annrett desserten når alt har fått romtemperatur og rett før den skal spises.
  • Fordel først eplemosen i fire dessertskåler. Ha deretter over loffsmulene og eplebiter og litt av karamellsausen. Topp med vaniljekesam og mer karamellsaus.
