Her kommer en italiensk klassiker. Vanligvis lages den med kalvekjøtt, men det er ikke alltid så lett å få tak i og det er nokså kostbart. Så til hverdags er kylling eller svin gode alternativer, og godt blir det uansett.  Retten er typisk italiensk i den forstand at den ikke består av så mange ingredienser slik at hver enkelt råvare kommer til sin rett. Rene gode smaker. Retten består ganske enkelt av tynne skiver kyllingfilet sammen med salvie og spekeskinke som stekes i pannen.

I denne retten bankes kyllingfiletene tynne. Jeg har skaffet meg en kjøtthammer, og må si det er mye god terapi i å banke løs på maten med en stor og tung klubbe. Dersom du ikke har en kjøtthammer kan du bruke kjevle eller en flaske. Fordi kjøttet blir banket så tynt, går stekingen meget fort. Et par-tre minutter på hver side er som regel nok. Dette er for øvrig et triks som kan brukes på mange typer kjøtt for å få steketiden ned i en travel hverdag.

Ingredienser

  • 2 poser byggryn (boil in bag)
  • 1/2 liten rødløk
  • 1 neve bredbladet persille
  • saften av 1/2 sitron
  • salt og pepper
  • --
  • 4 kyllingbryst
  • 4 skiver spekeskinke
  • 16 salvieblad
  • salt og pepper
  • olje til steking
  • 1 ss smør
  • 1 dl hvitvin

Fremgangsmåte

  • Begynn med å lage byggrynsalaten. Kok byggrynene som anvist på pakken.
  • Ta grynene ut av posene og avkjøl.
  • Finhakk løk og persille og bland det inn med byggrynene.
  • Press over sitronsaften og smak til med salt og pepper.
  • Legg et kyllingbryst mellom to lag plastfolie og bank det til det er ca. 1 cm tykt.
  • Gjør det samme med de tre andre kyllingbrystene også.
  • Del hvert kyllingbryst i to.
  • Krydre med pepper og legg først to salvieblader på hver del og en skinkeskive oppå. Fordi skinken normalt er nokså salt, trengs det ikke ekstra salt i denne retten.
  •  Fest gjerne med en tannpirker eller cocktailpinne  så det holder seg på plass under steking.
  • Varm oljen i en stekepanne og stek kyllingstykkene raskt på høy varme så de får en fin gyllen stekeskorpe.
  • Fordi kjøttet er så tynt kan det fort bli tørrstekt, så pass godt på.
  • Når kyllingen har blitt pent stekt has smøret og vinen oppi pannen.
  • Legg på lokk og la kyllingen bli ferdig på ettervarmen i pannen.
  • Hell sausen over kjøttet ved servering.

Server kyllingen med byggrynsalaten og tomatsalat. Vel bekomme.
