Nå er det nypoteter å få i butikken. I hvert fall var det det i den butikken jeg handlet i på lørdag. Og derfor er det poteter som får spille hovedrollen i mandagens kjøttfri middag. Jeg synes nypoteter er så godt at de er et festmåltid i seg selv. Det er kanskje ikke helt stuerent å si at man liker poteter etter at de har blitt hetset av low-carb tilhengere i flere år og til og med Helserådet ikke lenger mener poteter har en naturlig plass blant dagens 5 grønne. Men nypoteter er godt og da spiser jeg dem med god apetitt.

Her har de fått følge av knasende, skarpe reddiker og herlige asparges. I tillegg har jeg egg i salaten for at den skal mette litt mer. Salaten kan selvsagt jazzes opp med mye flere godsaker, men jeg liker å lage enkle salater uten for mange ingredienser. Da synes jeg de enkelte smakene kommer bedre til sin rett.  For at denne salaten skal bli skikkelig god, kreves det gode råvarer. Jeg bruker helt nye nypoteter som er små, faste og fine. Aspargesen må være struttende og grønn og gjerne norsk om du får tak i. Best synes jeg det blir med nykokte poteter og asparges som fortsatt er lune Er du ikke så nøye på det med en veggismiddag, er det sikkert nydelig med litt god spekeskinke oppi.

Ingredienser

  • 150 gr blandet salat
  • 1 neve friske urter
  • 800 gr nypoteter
  • 1 bunt asparages
  • 1 bunt reddiker
  • 4 egg
  • --
  • 1 ss hvitvinseddik
  • 1 ts dijon sennep
  • 1/2 ts salt
  • nykvernet pepper
  • 4 ss god olivenolje

Fremgangsmåte

  •  Vask potetene godt og kok dem med skallet på.
  • Kok  eggene til de er hardkokte.
  • Ta potetene opp når de er knapt møre.
  • Damp aspargesen til den er blitt irrgrønn, men ikke har mistet spensten. I dampovn er det fire minutter. Det er omtrent samme koketid dersom du koker dem på platen.
  • Vask salaten og tørk den i et håndkle eller i en salatslynge. Del salaten opp og riv oppi urtene.
  • Del potetene i 4 biter og skjær aspargesen i 4 cm lange biter.
  • Skjær reddikene i tynne skiver.
  • Del eggene i halve.
  • Lag dressingen ved å blande hvitvinseddiken med sennepen og ha i salt og pepper. Pisk inn oljen.
  • Dander alt på et fat og hell over dressingen.

Server med godt brød til. Vel bekomme.
