Når det er sommer er det istid, det gjelder uansett vær og føreforhold slik jeg ser det. Her inne min har jeg flere isoppskrifter, og nå legger jeg til en karamellis. Den smaker herlig karamell, og hva er vel herligere enn det, for en som er skikkelig glad i karamell. Å lage karamell er alltid et spennende prosjekt. Lar du sukkeret koke for lenge, blir det brent og bittert og ikke godt i det hele tatt. Lar du sukkeret ikke koke lenge nok blir det ikke den deilige nesten-brente smaken som er den jeg i hvert fall trakter etter, men i stedet en nokså kjedelig blass saus. Det er med andre ord litt som å balansere på en knivsegg. Det gjelder å treffe rett tidspunkt. Velger du for kort tid, blir det en kjedelig saus og glemmer du sausen og koker for lenge blir den brent og bitter.

I fjor kjøpte jeg meg en iskremmaskin og det har jeg virkelig ikke angret på. For med den har jeg ferdig iskrem i løpet av en drøy time. Det finnes mange forskjellige iskremmaskiner og de kommer i veldig mange prisklasser. Den jeg valgte er en nokså billig variant. Den har et fryseelement i bunnen og ikke en hel bolle som skal fryses ned. Det siste er muligens mer effektivt.  Men har du som jeg begrenset fryserkapasitet, forstår du hvorfor et lite fryseelement på ca. 15 cm i diameter og 5 cm høyt er bedre enn en hel bolle. Uansett funger det bra til en porsjon. Skal jeg ha flere porsjoner må jeg planlegge. Jeg har også vært inne på tanken om å kjøpe et ekstra fryseelement.

Jeg hr lenge holdt kjøkkenet nokså fritt for maskiner og dupeditter av mange slag, men i det siste har jeg allikevel skaffet meg noen stykker. Jeg har fått meg iskremmaskin, pastamaskin, stor kjøkkenmaskin og dampovn. Den siste er jo fastmontert, men de andre er maskiner som jeg i en årrekke har levd helt supert uten. Men nå som jeg har fått dem, må jeg innrømme at de gjør en del jobber mer lettvint. Dessuten er jeg så heldig at jeg har en stor kjeller der jeg kan stuve vekk ting jeg ikke bruker så ofte. For kjøkkenbenken min og dyrebar skapplass vil jeg fortsatt ikke bruke på en stor maskinpark. Jeg mener fortsatt at man fint kan klare seg uten alle disse maskinene, men er det noe jeg virkelig tror jeg kommer til å bruke vil det kanskje ikke sitte så langt inne å kjøpe noe. Brødbakemskin, eggkoker, riskoker og vannkoker derimot, kommer imidlertid ikke på tale – det er helt sikkert – tror jeg).

Ingredienser

  • 0,75 dl kremfløte
  • 0,75 dl sukker
  • 2 ss vann
  • 1 ss smør
  • --
  • 2 dl kremfløte
  • 100 gr sukker
  • 1 ss vaniljesukker
  • 3 eggeplommer
  • 2,5 dl helmelk

Fremgangsmåte

  • Begynn med å lage karamellsaus. Ha sukkeret i en tykkbunnet gryte sammen med vannet. La sukkeret smelte og koke til det blir brunt men ikke brent. Pass nøye på for på slutten går det veldig fort.
  • Tilsett fløten og la det koke til karamellen har løst seg opp i fløten.
  • Ta karamellsausen av varmen og rør inn smøret.
  • Sett til avkjøling.
  • Lag isen ved å piske kremfløten til den er halvstiv.
  • Pisk eggeplommene, sukker og vaniljesukker til det blir hvitt og luftig.
  • Rør inn melken og bland til slutt inn kremen.
  • Hell blandingen sammen med halvparten av karamellsausen i en iskremmaskin. Dersom du ikke har iskremmaskin, hell i en beholder med lokk og rør kraftig i isen hver halve time til den har blitt halvstiv. Det er for å unngå at det blir iskrystaller.
  • Når isen er ferdig. Hell over resten av den kalde karamellsausen og rør slik at det slik at det blir karamellstriper i isen.

Server gjerne isen med krokan eller hakket daim og friske bær ved siden av. Vel bekomme!
