Reker er sommermaten fremfor noen. Å sitte utover lange lyse sommerkvelder med et stort fat reker, kjølig hvitvin og gode venner er noe av det hyggeligste jeg kan tenke meg, og mer sommerete blir det ikke. Men av og til kan det være morsomt med en liten vri selv på denne klassiske retten. Røkte reker er nettopp en slik litt spennende variant.

For et par år siden fikk Husbond og jeg servert røkte reker på den nå nedlagte Akersberget restaurant. Røksmaken passet ypperlig til det søte rekekjøttet og ga de velkjente rekene en helt ny dimensjon. Jeg har tenkt litt på disse rekene siden, men fordi jeg ikke har hatt noe å røke i har det blitt med tanken. Men for et par uker siden var jeg i en stor sportsbutikk og da fikk jeg øye på en røykovn. Da kom jeg igjen på disse rekene og bestemte meg der og da for å kjøpe ovnen. Ikke var den særlig dyr, og det er jo i grunn mye mer enn reker som kan røkes.

Etterpå har jeg funnet ut at røkte reker er vanlig i Sverige. Et googlesøk på røkte reker på norsk ga bare noen få treff, mens i Sverige kom det flere tusen oppskrifter, så dette er helt tydeligvis noe våre naboer i øst kjenner godt til. Men disse rekene er for gode til at svenskene kan ha dem for seg selv. Så jeg anbefaler deg å teste dette ut dersom du har en røkeovn. Rekene kan forresten også røkes i grillen. Tenn opp grillen og sett inn et fat med røykspon og lukk igjen lokket. Hele grillen blir da et røykkammer.

Både ferske og frosne reker kan brukes. Utfordringen er visst nok at rekene kan bli tørre dersom de ligger for lenge i røkeovnen. Av den grunn anbefaler mange å bruke frosne reker uten å tine dem først. Jeg valgte denne fremgangsmåten, og resultatet ble saftige reker med en tydelig, men ikke for sterk røksmak. Størrelsen på rekene har nok også betydning. Jeg brukte veldig store reker (40-60). Hadde jeg hatt mindre reker, ville jeg nok kuttet ned røketiden.

Legg de frosne rekene på risten i røkeovnen og dryss over litt salt, sett på lokket og tenn opp.  La rekene stå over varmen i 20 minutter. Ta ovnen av varmen og la den stå i enda 10 minutter med lokke på. Nå skal rekene være ferdig og klare til å nytes med majones, sitron og gjerne loff. Rekene kan miste litt av saltsmaken så dryss gjerne litt flaksalt over. Dette er snadder så vel bekomme.
