Pinnekjøtt er noe av det beste jeg vet og for meg hører det førjulstiden til. Tradisjonen tro har vi et par middagsselskaper før jul der pinnekjøtt står på menyen. I tillegg til at det er sabla godt, er det jo også veldig enkel gjestemat å by på, da. Kjøttet må jo trekke lenge, men passer seg stort sett selv. Tilbehøret passer seg selv så da kan man bruke mer tid på borddekking og andre morsomme ting.

Selvsagt kan man lage sitt eget pinnekjøtt ved å salte og tørke. Jeg har barndomsminner om min mormor som hadde pinnekjøtt hengende til tørk på et soverom som ikke var i bruk og tålte å stå med åpent vindu i lengre perioder. Hennes mat var alltid himmelsk god. Men jeg synes det er greit å kjøpe i butikken eller hos slakter. Helst går jeg til Fenaknoken eller Strøm-Larsen. Da vet jeg at jeg får kvalitet og det gjør godt å støtte opp om de som driver små spesialbutikker. Det kan selvsagt godt hende at det billige pinnekjøttet fra Slagermester’n er like godt, men når vi skal ha gjester har jeg ikke lyst til å eksperimentere med akkurat det.

Er du som meg har du nok laget litt ekstra. Har du mye rester kan du fryse ned og ta opp senere. Da er det bare å legge kjøttet rett under grillen i oven. Lettere kan det ikke bli. Men du kan også  trylle restene og prøve deg på en av disse oppskriftene.

Ingredienser

  • 2 kg pinnekjøtt
  • Bjørkepinner/metallrist
  • Vann
  • Stor gryte

Fremgangsmåte

  • Vann pinnekjøttet ut natten over, skift vann minst en gang.
  • Legg bjerkepinner eller en metallrist i bunnen av en stor kjele. Det skal være god plass til alt kjøttet.
  • Fyll opp med vann til litt under risten. Legg kjøttet oppi og kok opp. Kjøttet må koke leeenge. Minst tre timer. For å være på den sikre siden bør du begynne minst 4 timer før gjestene kommer.
  • Pass på at det ikke fosskoker eller koker tørt. Tilsett litt vann underveis. om nødvendig. Når kjøttet faller av bena er det ferdig kokt. Så langt kan det gjøres god tid i forveien.
  • Før servering sett grillen i ovnen på og legg det ferdig kokte pinnekjøttet i langpannen og la det få et par minutter under grillen. Da blir kjøttet deilig og sprøtt.
  • Bruk kraften i bunnen av kjelen som saus og server med poteter og kålrabistappe til.

Noen bruker også Vossakorv ved siden av.

Tips

Litt avhengig av kjøttet kan kraften bli temmelig fet. Dersom du ønsker en litt mindre fet saus, kan du sette gryten ut til avkjøling. Da vil fettet flyte til toppen og danne et fettlokk. Det kan du ta av og kaste og sitter da igjen med en magrere kraft.
