AUGUST – har du tenkt på at agurk kan brukes til mye mer enn som en litt kjedelig salatingrediens. Salat smaker jo mildt (nesten ikke av noe, vil kanskje noen si), men samtidig friskt og sommerlig. Nå er de norske agurkene på topp, og det er en god idé å teste ut nye måter å bruke agurken på. Nedenfor finner du mine 5 beste oppskrifter med agurk.

 

Kald yoghurt og agurksuppe

Dette er en skikkelig herlig suppe der agurken spiller hovedrollen sammen med yoghurt. På en varm sommerdag er det ikke mye som slår denne suppen. Den er leskende, frisk og metter akkurat nok på en dag der matlysten ikke er på topp på grunn av varmen. Den er også lett å lage og kan has på lur i kjøleskapet.

I denne retten er agurken varm. En litt uvant tanke kanskje, det at agurken kan stekes. Men jeg lover deg at dette er godt. Her møter den svale, friske agurken det søte rekekjøttet. Det er en helmax kombinasjon. Du får ta meg på mitt ord. Prøv denne.

Kjører du tacofredag? Da kan du jo prøve denne salasaen ved siden av neste gang. Den er både søt, syrlig, svalende og hot på en gang – ikke dårlig, det vel. Bytter du ut kjøttdeigen med strimlet svinekjøtt har du en sikker vinner.

Knust agurk

OK, dette er jo i grunnen en salat, men i hvert fall av det litt uvanlige slaget. Denne agurksalaten kommer fra Schezuan provinsen i Kina. Det er en enkel salat med agurk og dressing. Det som gjør at den allikevel er spennende, er at agurkene er knust. Da blir overflaten blir ruglete og mange cellevegger i agurken ødelagt. Det gjør at agurken trekker til seg dressingen mye bedre.

Potetsalat med dill og agurk

Denne potetsalaten er lett og sommerlig. Det skyldes nok at rømme og majones er byttet ut med gresk yoghurt, men agurk og dill er absolutt også med på å sette sitt sommerpreg. Potetsalaten passer ypperlig til all slags fisk – både grullet, stekt, røkt eller trukket.

Alledede i 1927 bestemte danskene at det fikk være grenser for hvor krum agurker kan være og i 1988 vedtok EU et agurkdirektiv. FDet ble imidlertid ikke satt i kraft før 1. juli  2009.
