Risotto er noe av det beste jeg vet, særlig fordi den kan varieres i det uendelige alt etter sesong, hva man har og hva den skal serveres sammen med. På denne tiden av året er en av mine favoritter definitivt steinsopprisotto. Denne risottoen har en skikkelig intens smak av steinsopp,  en deilig kremete konsistens.

Etter min mening skal risotto også være ganske flytende – heller det enn en fast klump på tallerkene i hvert fall. Italienerne spiser den ganske så al dente. Første gang jeg fikk risotto i Italia synes jeg nesten den var litt ukokt og fortsatt liker jeg nok å koke den litt lenger enn mange i støvellandet. Men risen må definitivt ikke være overkokt og grøtete. Vel, vel det er nok smak og behag som gjelder her som med det meste av mat.

Jeg har laget denne risottoen med tørket steinsopp, men det går selvsagt an å bruke fersk også om du får tak i det. Da må det selvsagt mye mer til enn 40 gram. Beregn omtrent 250 gram eller mer.

Steinsopprisotto er supert å spise som egen rett, men passer også kjempegodt som tilbehør til stekt kjøtt og kylling. Og husk at gjestene skal vente på risottoen og ikke omvent. Blir risottoen stående en stund vil den trekke til seg for mye fuktighet og bli klissete og kjedelig i konsistensen.

Ingredienser

  • 3 dl risottoris (arborio eller carnaroli)
  • 2 sjalottløk
  • 1 fedd hvitløk
  • 1 ss olivenolje
  • 2 kvister timian
  • 5 dl kyllingkraft
  • 40 gr tørket steinsopp
  • 1 dl tørr hvitvin
  • 2 dl fint revet parmesan
  • 2 ss smør

Fremgangsmåte

  • Legg steinsoppen i en bolle og hell over kokende vann til soppen er dekket. La det stå i 30 minutter.
  • Sil av bløtleggingsvannet og ta vare på det.
  • Klem vann ut av soppen, grovhakk den og sett til side.
  • Finhakk sjalottløk og hvitløk.
  • Varm opp kyllingkraften sammen med 1 dl av bløtleggingsvannet.
  • Stek løken i olivenoljen et par minutter på middels varme til løken har blitt myk og blank men ikke tatt farge.
  • Tilsett risen og fortsett å steke til risen har blitt blank.
  • Tilsett timiankvistene og hvitvinen og la det koke inn.
  • Tilsett litt av kyllingkraften. La det koke nesten inn før mer tilsettes. Rør ofte i risen.
  • Fortsett til risen er al dente og all kyllingkraften er brukt opp.
  • Rør inn osten og soppen og la det koke et par minutter.
  • Ta ut timiankvistene.
  • Tilsett evt. mer bløtleggingsvann dersom risen virker tørr.
  • Avslutt med å  røre inn smøret.

Pynt med mer timian og server straks.

Tips

Du kan også bruke fersk steinsopp. Da deler du opp soppen i biter og steker den i smør. La soppen koke med de siste 3-5 minuttene. Annen fersk sopp kan også brukes.
