I går hadde vi taco til middag. For å lage en liten vri på denne klassikeren brukte jeg svinefilet som jeg skar i tynne stimler i stedet for karbonadedeig. Til taco hører det selvsagt med salsa, og jeg hadde lyst til å prøve en annen variant enn den vanlige tomatsalsaen.

Nå for tiden bugner jo butikkene av ferske, flotte fruker og grønnsaker, og det er dermed mye å velge mellom. Jeg synes at litt søt frukt passer godt til svinekjøtt, og siden jeg fant noen flotte aprikoser valgte jeg å bruke disse i salsaen sammen med agurk, løk og paprika. Resultatet ble, sånn helt ubeskjedent sagt, kjempegodt. Den blebåde søt, syrlig, svalende og hot på en gang – ikke dårlig, det vel. Den passet godt til tacoen med svinekjøtt, men mens jeg langet innpå, innså jeg at den ville ha gjort seg glimrende til stekt eller grillet fisk og kjøtt også.

Det er alltid viktig å smake til maten slik at resultatet blir som man ønsker. I oppskriften nedenfor har jeg skrevet at det skal være en grønn chili. Det er imidlertid ikke så lett å vite hvor sterk en sånn chili er som man kjøper i butikken. Dessuten er det jo slik at det en synes er veldig sterkt er mildt for en annen. Smak deg derfor frem til du finner riktig styrke. Jeg synes salsaen skal være ganske hot, men det er jo opp til hver enkelt. Mye av det samme kan sies om saften fra en lime. Noen limer har mye saft, andre lite, men sluttresultatet skal balansere den søte aprikosen, så igjen prøv deg frem til du finner en balanse du liker.

  • 1 grønn paprika
  • 1/2 løk
  • 6 aprikoser
  • 1 grønn chili
  • saften fra 1 lime

Fremgangsmåte

Skjær alt i små terninger unntatt chilien som finhakkes. Bland alle ingrediensene og smak til med litt salt og pepper. Dryss over grovhakkede korianderblader. Sett kaldt til det skal serveres. Server til taco, stekt fisk eller som grilltilbehør.

Tips

Du kan godt bruke ferskner eller nektariner dersom du ikke får tak i aprikoser.
