Det å putte sommerens poteter i en salat synes jeg er en skikkelig god idé. Jeg har flere potetsalater på bloggen allerede. Det er allerede en fransk potetsalat med oljedressing og en klassisk norsk potetsalat med rømme og majones. Men jeg gir meg ikke med disse, så derfor kommer det en ny potetsalat med dill og agurk og yoghurtdressing.

I denne potetsalaten synes jeg det er dillen som gir den karakter, så ikke være gjerrig med dillen. Bruk hele potten og gjerne mer om du har. Agurken og løken gir salaten litt tyggemotstand. For at agurken ikke skal gi for mye væske, skraper jeg ut den bløte kjernen med en teskje før jeg skjærer den i pene halvmåner.

Denne potetsalaten er enkel å lage og passer perfekt til sommerens fiskemåltider. Den er helt fenomenal til stekte eller grillede makrell eller til annen fet fisk som laks eller ørret. Det skyldes at den syrlige yoghurten er en flott kontrast til fisken. Syrlig rømme er også det, men yoghurten gir et lettere og friskere smaksbilde.

Ingredienser

  • 8 poteter
  • 1 slangeagurk
  • 1/2 rødløk
  • 2 dl gresk eller tyrkisk yoghurt
  • 1/2 dl melk
  • 1 potte dill
  • 1/2 sitron, saften
  • salt og pepper

Fremgangsmåte

  • Kok potetene med skallet på. Gjør resten klart mens potetene koker.
  • Bland yoghurt med melk, salt, pepper og sitronsaft. Dressingen skal være nokså løs, men ikke helt flytende. Smak til og juster smaken til den blir slik du liker.
  • Hakk opp dill, skjær løken i tynne ringer.
  • Del agurken i to på langs og skrap ut den bløte kjernen. Skjær deretter i skiver på 3-4 mm.
  • Bland agurk, dill og løk inn i dressingen og sett til side.
  • La de ferdigkokte potetene avkjøle seg litt. Skjær deretter i terninger og ha dem oppi dressingen.

Server til stekt eller grillet makrell eller laks.

Tips

Jeg synes det er best å bruke den tykke tyrkiske eller greske yoghurten til dette. Jeg synes den har en litt rundere smak og fyldigere konsistens. Ønsker du å bruke vanlig naturell yoghurt i stedet kan du selvsagt gjøre det. Da kan du evt. tilsette 1 ts sukker for å runde smaken litt.
