Inspirasjon til nye matretter kan komme fra så mange steder. Av og til er det ikke godt å vite hvorfra heller. Men denne gangen vet jeg at ideen startet med et radioprogram der en innringer lurte på hva han kunne gjøre med de mange agurkene som vokste i hagen hans. Et av forslagene var å steke dem. Det satte noe i gang hos meg, og en god stund har ideen om stekte agurker sluret i bakgrunnen. Jeg tror nok at noe av grunnen til at dette satte seg fast i minnet mitt, var at jeg aldri har tenkt på å steke agurk før. For meg har agurken først og fremst vært en salatingrediens, eller noe jeg pynter brødskiven min med. I den grad jeg har tenkt på varm agurk, har jeg tenkt at den kom til å bli slapp og ekkel.

Det skulle imidlertid vise seg at jeg i alle år har tatt feil. Det går helt fint å steke agurk. Ikke lenge riktignok, for da går den litt i oppløsning og blir litt grøtete. Et par miutter i woken derimot, det tålte den fint. Varmen brakte frem ekstra sødme i agurken og tok bort litt av den bitre smaken. Sammen med reker og asiatiske smaker ble dette et riktig så vellykket eksperiment.

Ingredienser

  • 1 kg store reker
  • 2 agurker
  • 2 fedd hvitløk
  • 1 grønn chili
  • nøytral olje til steking
  • 1 neve bredbladet persille
  • 1 neve mynte
  • 2 ss soyasaus
  • 2 ss tørr sherry/risvin
  • 1 ts maizenamel

Fremgangsmåte

  • Når man woker går det fort, så gjør alt klart på forhånd, slik at det bare er å ha oppi woken etter hvert.
  • Pill rekene og sett til side. Del agurken i to på langs og skjær i 1 cm tykke halvmåner. Hakk persille og mynte grovt og hvitløk og chili fint. Bland sammen soyasaus, sherry og maizenamel.
  • Varm opp woken til den er glohet. Ha i litt olje og fres hvitløk og chili.
  • Ha oppi agurken og rørestek i et par minutter.
  • Tilsett rekene og forsett å røre i ett minutt til.
  • Hell oppi  sausen og la den få et oppkok.
  • Rør inn urtene.

Server straks, gjerne med ris ved siden av.
