Dersom du liker tzatziki er definitivt kald yoghurt og agurksuppe noe for deg. Smaksmessig ligner den nemlig litt på den populære greske sausen, men dill gir den en liten nord-europeisk tvist. Suppen er veldig luftig og føles lett og fordi den er kald er den også veldig forfriskende i varmen.

Man kunne kanskje tro at suppen vil være veldig sur med både yoghurt naturell og sitron. Men gresk eller tyrkisk yoghurt som jeg har brukt synes jeg er langt mindre syrlig og nesten litt søt. Jeg opplever derfor ikke suppen som sur i det hele tatt. Ja visst, er den syrlig, men på en god og balansert måte. Det er også hvitløk i suppen, synes du det er litt for mye å spise rå hvitløk, lar du bare være å tilsette det. Men for meg er den helt essensiell for å få den riktige smaken.

Ofte kan jeg miste litt matlyst i varmen, og da er supper som denne et veldig godt alternativ. Kald yoghurt og agurksuppe er leskende samtidig som den gir næring uten at jeg trenger å spise noe særlig. Lag gjerne en stor porsjon suppe og oppbevar den i kjøleskapet. Da kan du forsyne det med en liten porsjon når du er litt småsulten eller vet at du burde spise. Det gjør jeg.En annen bonus i sommervarmen er at suppen er veldig enkel og rask å lage, og den krever ingen koking eller nærkontakt med andre varmekilder. Den er laget på 1 – 2  – 3: Skjær opp – blend – kjøl ned.

Ingredienser

  • 2 agurker
  • 1/2 l gresk yoghurt
  • 1/2 sitron, saften
  • 1 potte dill
  • 1 ts salt
  • olivenolje, rødløk til servering

Fremgangsmåte

  • Skrell agurkene og ta ut de bløte kjernene, og del i grove biter.
  • Hakk dillen grovt.
  • Ha agrukbitene, yoghurten, sitronsaften, dillen og saltet i en blender og kjør til det er helt glatt og luftig.
  • Smak til og juster evt. med mer sitronsaft eller salt.
  • Sett suppen i kjøleskapet i minst 1 time, gjerne over natten slik at alle smakene får satt seg.
  • Smak til en gang til og server i boller med små agurk- og løkterninger og litt olivenolje på toppen.
