Steinsopp er virkelig et matmessig høydepunkt, synes jeg. Det smaker rett og slett bare supergodt. I påvente av at sesongens skal begynne, koser jeg meg med tørket steinsopp.  Det er ikke helt som den ferske, selvfølgelig, men den er fortsatt veldig god.  I dag har jeg brukt den til å lage spagetti med steinsopp. Det er en veldig enkel rett med bare 4 ingredienser, spagettien inkludert og så salt og pepper da.

For riktig å lokke frem soppsmaken, bruker jeg både hele soppbiter, malt steinsopp og bløtevannet. Sammen med smøret er det alt som skal til. Resultatet ble en konsentrert og smaksrik saus proppfull av umami og skog.

Tørket steinsopp er en nokså dyr affære her i Norge, men skal du på ferie i Italia er det en flott suvenir å ta med seg hjem. Der får du en stor pakke for under 10€. Og en slik pakke varer lenge for soppen er drøy i bruk. Og hva du kan bruke den til? På pizza, i risotto, soppsauser, til en nydelig omelett, eller alle andre steder du vil bruke annen sopp. Du kan jo for eksempel lage denne pizzaen også

Ingredienser

  • Spagetti til 4 personer
  • 50 gr tørket steinsopp
  • 50 gr smør
  • salt og pepper
  • frisk timian

Fremgangsmåte

  • Ta til side 50 gr av den tørkede steinsoppen og knus dette til pulver.
  • Kok opp litt vann og hell over resten av soppen og la det stå i 15-20 minutter.
  • Kok opp vann til spagettien og kok som anvist på pakken
  • Mens spagettien koker, ta soppen opp av bløtevannet, men ta vare på det. Klem vannet ut av soppen og hakk den i mindre biter.
  • Smelt smøret i en stekepanne og fres soppen et par minutter. Ha oppi soppulveret og timianen og rør.
  • Sil bløtevannet gjennom et klede og ha 2 dl oppi stekepannen med soppen. La det småputre til spagettien er klar. Tilsett evt. litt mer bløtevann dersom sausen blir for tørr/tykk. Den skal være litt flytende. Smak til med salt og pepper.
  • Sil vannet av spagettien og rør den inn i sausen.

Server straks, gjerne med en salat ved siden av, og kanskje et glass lett rødvin også 🙂
