Har du laget hvit pizza før? Det er skikkelig godt, og ikke det spor vanskeligere enn å lage vanlig «rød» pizza. I dag lagde jeg en veldig god variant en pizza bianca med steinsopp og parmaskinke. Skikkelige italienske smaker med andre ord.

Vi ferierer nesten hvert år i Italia, og hver gang tar jeg med meg tørket steinsopp hjem. Det er den beste typen suveniren jeg kan tenke meg – noe spiselig, altså. I butikken her hjemme kan man kjøpe en liten pose med steinsopp for en hel formue, mens i Italia får man en stor pose med topp kvalitet for bare 10 euro. Steinsopp har en ganske kraftig smak, og for meg er det kongen av sopper. Tørket steinsopp er supert å bruke i risotto og til forskjellige pastaretter. Det er også fint å knuse steinsoppen til et pulver og ha i sauser og lignende. Men av en eller annen grunn har jeg ikke tenkt på bruke den på pizza før nå. Men det fungerte utrolig bra.

Når jeg lager pizza liker jeg å lage en veldig tynn bunn, og med forholdsvis lite fyll oppå. På den måten blir bunnen veldig sprø. Men med nokså lite fyll, er det viktig at fyllet har skikkelig smak for at pizzaen ikke skal bli kjedelig. Derfor er steinsopp bra å bruke, for den har jo masse smak og det blir definitivt ikke en kjedelig pizza.

Jeg har oregano som vokser i store mengder i hagen. Derfor bruker jeg frisk oregano i denne oppskriften, men har du ikke tilgang på frisk oregano kan du fint bruke tørket. Husk bare at tørket oregano har en mye mer konsentrert smak, så mengden må reduseres kraftig.

Ingredienser

  • 10 dl hvetemel
  • 4 dl vann
  • 4 ss olivenolje
  • 50 gr gjær
  • 1 ts salt
  • 1 boks creme fraîche
  • 1 ts hvitvinseddik
  • 2 ss finhakket fersk oregano (eller 1 ts tørket)
  • 1 fedd hvitløk, most
  • nykvernet pepper og salt
  • 50 gr tørket steinsopp
  • 1 mozzarella
  • revet Jarlsberg
  • parmaskinke
  • (fersk) oregano
  • trøffelolje (valgfritt)

Fremgangsmåte

  • Ha hvetemel og salt i en bolle. Smuldre gjæren oppi bollen. Tilsett vann og olivenolje. Elt deigen lenge. Det er lettere med en kjøkkenmaskin. La den gå i 10 minutter.
  • Sett deigen til heving til deigen har blitt dobbelt så stor. Del deigen i 4 emner.
  • Mens deigen hever, kok opp vann og hell over steinsoppen.
  • Sett til side.
  • Bland creme fraîche, hvitvinseddik, oregano, most hvitløk, salt og pepper i en liten bolle og sett til side.
  • Kjevle ut de fire deigemner.
  • Smør creme fraich sausen utover og legg på steinsoppen. Dryss over Jarlsbergosten og legg på mozzarella biter.
  • Stek pizzaen på grillen, på pizzastein, eller i så varm ovn som mulig.
  • Legg på skinke og fersk oregano på rett før servering. Drypp over litt trøffelolje om du har. Vanlig god olivenolje fungerer også bra.
