Knust agurk er en nydelig salat med klare, asiatiske smaker av soyasaus, riseddik og sesamfrøolje. Den passer ypperlig til grillet kjøtt og fisk. Salaten har sirkulert en stund på nettet og jeg var nysgjerrig på denne måten å lage agurksalat på. I stedet for å skjære agurken opp i tynne eller tykke skiver knuses den. Samtidig blir mange cellevegger ødelagt, slik at agurken bedre kan ta til seg den gode dressingen.

Knust agurk kommer opprinnelig fra Schezuan og serveres gjerne til sterk mat som en kontrast. For denne salaten er ikke hot, bare smaksrik. Dersom du på liv og død må ha en hot salat, kan det enkelt fikses med å tilsette noen chiliflak i dressingen, eller ringle over litt chiliolje ved servering.

Teknikken går rett og slett ut på å knuse agurkene med noe tungt og flatt. Så tilsettes de litt salt slik at litt av væsken kan renne av og tilslutt får de et møte med dressingen. Enkel å lage, og noen ganger er det deilig å dælje løs på noe for å få stress, sinne eller frustrasjon ut av kroppen. Resultatet av anstrengelsene er i hvert fall en nydelig salat som passer veldig godt til grillet kjøtt eller fisk.

Ingredienser

  • 2 agurker
  • 1 ts salt
  • 3 ts riseddik
  • 1 ts balsamicoeddik
  • 1 fedd hvitløk, most
  • 2 ss soyasaus
  • 1 ts sesamfrøolje
  • 1 ts sukker
  • 1 ss sessamfrø, ristet

Fremgangsmåte

  • Skjær endene av agurkene og del hver av dem i 3 like store biter på tvers.
  • Legg agurkbitene i en pose og knus dem med en tung gryte eller stekepanne. Det er ikke meningen at de skal moses helt, men presses så hardt at de sprekker. på langs.
  • Ta agurkbitene ut av posen og brekk eller skjær dem opp i munnrette biter.
  • Legg dem i et dørslag og dryss salt over. La det så i minst 15 min og gjerne opp til en halv time i kjøleskapet.
  • Rist sesamfrøene i en tørr stekepanne til de har fått litt farge og det begynner å lukte godt. Sett til side.
  • Bland alle ingrediensene til dressingen og rør til sukkeret har løst seg opp. Sett til side.
  •  Ved servering blandes dressingen inn i agurken og sesamfrøene drysses over.
