Nå begynner høsten definitivt å nærme seg og da blir det krabbetid.  Etter et krabbemåltid er det alltid en haug med krabbeskall igjen. Dette er gull, og noe som absolutt bør utnyttes. Min anbefaling er derfor å lage krabbesuppe av disse restene. Denne krabbesuppen får en utrolig god smak, og den er slett ikke vanskelig å lage heller.

For å få max smak ut av krabbeskallene, skal de flamberes i cognac. Det holdt nesten på å gå helt galt for meg i dag. En bitte liten del av luggen kom nemlig i veien for flammene. Heldigvis var det så lite at det ikke synes, men jeg ble minnet på hvor viktig det er å være forsiktig. Og når vi snakker om å være forsiktig, så er det kjempeviktig å huske å slå av kjøkkenviften mens flamberingen pågår, så ikke flammene blir trukket inn i viften. Det kan jo få enda mer alvorlige konsekvenser enn en litt kortere pannelugg.

Denne suppen kan også lages med rekeskall, hummerskall, kongekrabbeskall eller en blanding av flere forskjellige typer. Rekeskallene skal ha kortere koketid enn de andre harde skallene, men alle typer skalldyr gir en fantastisk god kraft. Med unntak av koketiden er fremgangsmåten den samme. Ingrediensene kan også være de samme, men her går det også an å eksperimentere litt med forskjellige krydder og urter.

Dersom du ikke har spist krabber på forhånd kan du selvsagt kjøpe krabber utelukkende for å lage denne suppen. Du vil da sannsynligvis sitte igjen med mer krabbekjøtt enn du får bruk for i suppen. Men da kan du bruke resten av krabbekjøttet til å lage en superenkel spagettirett med krabbe eller kanskje krabbekaker.

Oppskriften nedenfor er beregnet som et lett måltid, eller en forrett. Dersom du planlegger å servere dette som en hovedrett, ville jeg bakt et godt brød til å ha ved siden av. Du kan jo for eksempel prøve denne kjempegode focacciaen.

Ingredienser

  • I kg krabbeklør, eller 4 krabber
  • 2 ss rapsolje
  • 1/2 dl cognac
  • 3 ts tomatpuré
  • 1,5 l vann
  • 1 gulrot
  • 2 stilker stangselleri
  • 1/2 purre (det grønne)
  • 1 liten løk
  • 4 fedd hvitløk
  • 2 stilker timian
  • 1/2 ts kayennepepper
  • 3 dl kremfløte
  • 1 ts salt
  • 1/3 sitron, saften
  • noen dråper tabasco
  • --
  • creme fraiche
  • dill

Fremgangsmåte

  • Rens krabbeklørene eller krabbene og ta vare på både skallene og kjøttet. Har du bare skallrester igjen etter et krabbemåltid har du jo allerede gjort denne jobben.
  • Knus skallene.
  • Varm oljen i en stor gryte og fres krabbeskallene i noen minutter.
  • Hell over cognac'en og tenn på. PASS PÅ AT KJØKKENVIFTEN ER SLÅTT AV. Rør mens spriten brenner av.
  • Tilsett tomatpuréen og la det frese et par minutter til.
  • Ha oppi vannet, grønnsakene og krydderet og la alt koke under lokk på middels varme i ca. 45 minutter.
  • Sil suppen og kok væsken inn til ca. halv mengde.
  • Tilsett fløte og salt og la suppen koke i ca. 10 minutter til.
  • Smak til med sitronsaft og evt. mer salt.

Server suppen rykende varm og pynt med krabbekjøtt, creme fraiche og dill.

Tips

Suppen kan gjærne lages på forhånd og bare varmes forsiktig opp før servering. Litt toast med godt smør kan smake godt ved siden av. Dersom det ikke passer å spise suppen med en gang, kan du lage kraften og koke den inn, for så å fryse ned.

OJ, jo det har du jommen rett i. Det skal selvsagt være 1,5 liter ikke desiliter. Er rettet opp i oppskriften nå. Håper du fant ut av det og fikk et bra resultat.
