Dagens lunsj var en enkel pastarett med krabbe, chili og hvitløk. Vi hadde sjømat til middag i går, og i dag satt jeg igjen med 4 krabbeklør. Ikke all verdens med mat, men nok til å gi smak til en aldeles nydelig pastarett skulle det vise seg. Krabben fikk følge av andre ting vi nesten alltid har tilgjengelig – løk, hvitløk, chili, sitron og spagetti.

Det jeg elsker med italiensk mat er at råvarene virkelig får skinne. Det er ikke snakk om å gjøre så mye med dem at de helt blir noe annet. Tvert imot er det bare snakk om å hjelpe til og løfte frem de gode smakene som allerede finnes der. Krabbe har nokså kraftig smak, og passer ypperlig sammen med litt sting fra chili og hvitløk. Sitronen gjør retten friskere og litt lettere. En god olivenolje supplerer og løfter retten det siste stykket fra grei til veldig god.

Noen liker mye chili, mens andre nesten ikke kan få nok. Styrken på de chiliene som er å kjøpe i butikken varierer også kraftig. Begynn derfor heller med litt for lite enn litt for mye. Det er jo ikke meningen at chilien helt skal overdøve krabben heller. Så mitt råd er å forsøke seg frem fra litt til evt. litt mer.

Ingredienser

  • Spagetti til 2 personer
  • 4 krabbeklør
  • 1/2 liten løk
  • 1 fedd hvitløk
  • 1/2 rød chili
  • 1 liten potte persille
  • 4 ss olivenolje
  • 1/2 sitron, skall og saft

Fremgangsmåte

  • Rens klørne for kjøtt. Sett i kjøleskapet.
  • Kok spagetti.
  • Mens spagettien koker, finhakk løk, hvitløk og chili.
  • Varm olivenoljen i en liten stekepanne eller gryte.
  • Fres løk, hvitløk og chili et par minutter til løken er myk og blank. Pass på at løken ikke blir brent.
  • Tilsett sitronsaften.
  • Skru av varmen og ha oppi sitronskall, persille og krabbekjøttet. Ta et par ss av kokevannet fra spagettien oppi krabbeblandingen.
  • Hell av pastavannet og bland spagetti med krabbeblandingen.

Server straks med litt ekstra god olivenolje dryppet over. Vel bekomme.
