Jeg er sikker på at dersom folk visste hvor lett det er å lage majones ville langt flere gjøre det. Det tar faktisk bare noen få minutter å lage den og da har man fullstendig kontroll på hva som er i den. Denne majonesen er smakssatt med sitron og har en frisk smak. Sitronmajones er supert tilbehør til reker, krabber og all mulig annen sjømat der du ellers ville ha brukt vanlig majones.

Det er ikke ett fett hva slags olje jeg bruker i majonesen. Helst liker jeg å bruke rapsolje fordi den har en nokså nøytral smak. Det går også an å bruke solsikkeolje. Det går også an å bruke olivenolje, men det gir smak til majonesen. Av og til kan jo det være akkurat det man ønsker, men for en ren, klassisk majonessmak går jeg for en nøytral olje.

For å gi majonesen ekstra god sitronsmak, tilsetter jeg også skallet av 1/2 sitron. Bruk gjerne en økologisk sitron om du får tak i det. Uansett er det viktig å skrubbe skallet i varm vann før skallet rives. Selv om de økologiske sitronene ikke er sprøytet, kan de jo være skitne.

Ingredienser

  • 1 ts dijon sennep
  • 2 ss sitronsaft
  • 1/2 sitron, sitronskall
  • 2 egg
  • 3 dl nøytral olje
  • 1/2 ts salt

Fremgangsmåte

  • Visp sammen sennep, sitronsaft og sitronskall i en bolle.
  • Skill plommene fra hvitene.
  • Pisk inn eggeplommene til det blir en seig masse.
  • Begynn å tilsette oljen i en tynn stråle mens du visper hele tiden. Følg med og se at eggeplommene absorberer oljen. Ikke tilsett mer før alt er absorbert.
  • Pisk til all oljen er tilsatt. Da egg kan variere ganske mye i størrelse må man ofte smake til majonesen med mer sennep, sitronsaft eller salt.

Tips

Det går også fint å lage majones med stavmixer. Da kan du ha alt i rørebollen og kjøre i vei.
