Denne uken ble det helt uten at jeg tenkte over det en nesten helt kjøttfri middagsuke. Ikke at det gjør noe, når det er så mye deilig man kan spise. Jordskokksuppe var veldig populært for 8-10 år siden, men har gått litt i glemmeboken. Det er synd, for det er veldig godt. Server den sammen med godt brød og du har en skikkelig digg middag. Salater er godt også om vinteren. Bare sørg for at det er nok «mat» i den til at man blir mett. Her er det en salat med laks og en med kylling. Skikkelig gode begge to. Ellers er inspirasjonen ganske Italia-tung med både spagetti, pizza og lasagne. Men hey, det er jo ikke noe galt å gi folk det de vil ha, så lenge det er godt og sånn ganske sunt.

Det er fortsatt mange som har hjemmekontor en dag eller to i uken. Da er det jo veldig lettvint å slenge i seg et par brødskiver, men det går jo an å gjøre mer ut av lunsjen uten at det nødvendigvis skal ta så mye lengre tid. Et alternativ er å lage litt ekstra middag dagen i forveien og så varme den opp til lunsj neste dag. Eller du kan ta en titt på en bloggpost jeg lagde i 2020 etter at vi alle hadde blitt sendt hjem.
