Hjemme hos oss er vi veldig tradisjonelle i matveien på fredager. Da er det hjemmelaget pizza – og som regel blir det pizza med pepperoni. For å si det slik, så er det ikke et folkekrav i familien at det skal være variasjon. Derfor blir jeg nødt til å lure inn en variant en gang i mellom, for jeg føler nemlig for litt variasjon av og til. Ikke fordi jeg ikke liker pizza med pepperoni, men litt variasjon i kosten har vel aldri skadet noen. Dessuten kan det jo være at vi oppdager en ny favoritt. Så denne uken var jeg altså litt vågal og lagde en variant med kjøttboller.

Disse kjøttbollene skal ikke stekes på forhånd. Farsen legges på pizzaen som små boller og stekes samtidig med pizzaen. Det er chili i kjøttbollene. Det er stor variasjon i hva man synes er sterkt nok og styrken varierer voldsomt på de chiliene man får kjøpt i butikken, så prøv deg litt frem slik at du får passe sterke kjøttboller. Jeg synes godt de kan være litt hotte, men Lillemor liker ikke sterk mat, så mengden nedenfor er et kompromiss. Men nærmere hennes preferanser enn mine – altså ikke så veldig hot.

Ingredienser

  • 4 dl vann
  • 50 gr. hvetemel
  • 4 ss olivenolje
  • 1 ts salt
  • 10 dl hvetemel
  • --
  • 1 liten løk
  • 2 fedd hvitløk
  • olivenolje til steking
  • 1 boks hakkede tomater
  • 2 ss tomatpuré
  • 1 toppet ts mørk buljong
  • nykvernet pepper
  • oregano
  • pizzakrydder
  • --
  • kjøttboller
  • 400 gr karbonadedeig
  • 1 chili, finhakket
  • 2 fedd hvitløk
  • 2 ts tørket oregano
  • 1/2 ts salt
  • rikelig nykvernet pepper
  • --
  • revet ost

Fremgangsmåte

  • Begynn med å blande farsen til kjøttbollene. Ha alle ingrediensene i en bolle og kna godt sammen.
  • La farsen så i kjøleskapet, gjerne i et par timer slik at smakene får satt seg.
  • Lag så deigen. Varm opp vannet til 37 grader og rør ut gjæren i vannet. Ha melet i en bolle og ha i salt. Hell i gjærblandingen og oljen og elt til deigen er smidig.
  • La den heve i minst 30 minutter.
  • Imens kan tomatsausen lages. Finhakk løk og hvitløk. Varm oljen i en kasserolle og ha i løken. La det surre til det er blankt. Ha i resten av ingrediensene. La det koke i minst 20 minutter. Men sausen blir bedre jo lenger den får koke. Pass på at den ikke er for våt.
  • Sett ovnen på 230 grader.
  • Del deigen i to og kjevle  hver del ut til en størrelse som dekker bakeplaten.
  • Lag kjøttbollene på størrelse med oliven, og fordel dem utover pizzaene
  • Dryss over revet ost.
  • Stek hver pizza i ca. 15 minutter. Server varm, gjerne med litt ruccolasalat strødd på toppen.
