Spagetti med tomat og ruccola er en svært lettlagd rett. Det er riktignok ikke noe som kan lages sånn helt spontant, for tomatene skal bakes i ovnen i en time først. Men bortsett fra å skylle dem og sette inn i ovnen er jo det noe som gjør seg selv. Resten er gjort mens pastaen koker. Det er med andre ord en nokså doven sommerrett. Den er i hovedsak vegetarisk og står godt på egne ben, men om du ønsker det passer den også fint sammen med et stykke grillet kjøtt.

Her har jeg brukt ruccola som jeg har hatt oppi spagettien rett etter at vannet er helt av. Restvarmen fra spagettien får ruccolaen til å falle sammen og bli helt myk. Smaken blir også litt mildere enn når den er rå. Har du ikke ruccola, kan du fint bruke små spinatblader eller strimler av annen bladsalat som for eksempel romano.  Det er kanskje ikke så vanlig å varmebehandle salat, men det er en fin måte å bruke salat på, og har du en litt overivrig grønnsaks-/urtehage er det jo greit å få spist en del på kort tid.

Ingredienser

  • Spagetti til 4 personer
  • 1/2 kg cherrytomater
  • salt og pepper
  • 2 + 2 ss olivenolje
  • 4 ansjosfileter
  • 1 liten løk
  • 100 gr ruccola

Fremgangsmåte

  • Vask cherrytomatene. Skjær dem i to og hell over litt olivenolje samt salt og pepper og bak dem i ovnen på 100 grader i en time.
  • Finhakk løk og ansjosfiletene.
  • Kok spagettien som anvist på pakken.
  • Mens spagettien koker varm opp oljen på middels varme i en gryte og fres ansjos og løk til ansjosen har gått i oppløsning og løken har blitt blank.
  • Ta til side 2 dl av kokevannet før resten av vannet helles av spagettien. Ha spagettien oppi gryten med ansjos og løkblandingen og rør godt. Tilsett litt kokevann for at det ikke skal bli for tørt.
  • Rør inn de bakte tomatene og ruccolaen og server.

Tips

I stedet for ruccolasalat kan du bruke spinat, romanosalat eller andre litt kraftige salater.
