Rød linsesuppe med tomater kunne like gjerne blitt kalt tomatsuppe med røde linser. Men navnet skjemmer som kjent ingen, og her utgjør omtrent de to tingene like mye så noe måtte jeg jo velge.  De røde linsene gir denne suppen en litt tykk og rustikk konsistens. Smaken er mild og burde ikke skremme noen. Vil du skremmes litt kan du tilsette litt (eller mye) chili om du vil. Dette er ikke en suppe for de store anledningene. Det er derimot en god hverdagssuppe som smaker herlig og er proppfull av ting som er godt for deg. Dessuten kan du slenge sammen på omtrent en halv time.

For tiden spiser jeg det EATlancet kaller Planetary Health Diet. Det er ikke egentlig en diett, men et sett retningslinjer som skal sørge for et sunt kosthold både for kroppen og kloden. Disse retningslinjene legger opp til svært lite kjøtt og animalske proteiner. For å kompensere for dette og sørge for at vi får i oss nok proteiner, er en annen retningslinje at man skal spise nokså mye bønner, linser eller belgfrukter hver dag. Denne suppen gir et godt tilskudd av linser.

Ingredienser

  • 1 liten løk
  • 2 fedd hvitløk
  • 2 ss olje
  • 1 l grønnsaksbuljong
  • 2,5 dl røde linser
  • 2 bokser hakkede tomater
  • 1 ts timian
  • 1 ts balsamicoeddik
  • 1 ts sukker
  • salt og pepper

Fremgangsmåte

  • Finhakk løk og hvitløk og fres dette i en gryte
  • Tilsett grønnsaksbuljongen og kok opp
  • Skyll linsene og ha dem oppi gryta.
  • Ha oppi de hakkede tomatene og timianen og la alt koke til linsene er helt møre, ca. 20 minutter.
  • Kjør suppen helt jevn med en stavmixer.
  • Smak til med eddik, sukker, salt og pepper.

Server med noen dråper olivenolje, en klatt rømme og litt grønt på toppen. Brød ved siden av smaker også godt.

Tips

Dersom du liker suppen litt hot kan du gjerne tilsette litt hakket chili sammen med løken og hvitløken.
