Challenge accepted – EAT Foundation utfordrer til å leve en måned med et kosthold basert på deres anbefalinger. Jeg plukker nå opp hansken og tar utfordringen. Kostplanen kalles Planteary Health Diet og skal være sunn for både kroppen og kloden. Dietten som ikke egentlig er en diett i den forstand, men et sett retningslinjer basert på forskning og skal gi premisser for et sunt og bærekraftig kosthold. Utgangspunktet er at det skal være mulig å brødfø 10 milliarder mennesker i 2050 på en bærekraftig måte.  I de neste fire ukene vil jeg og familien min etter beste evne holde oss til dette kostholdet. Det medfører mindre kjøtt, fisk, fjærkre og meieriprodukter og mer grove kornprodukter, grønnsaker, frukt, bønner, linser, belgfrukter og nøtter.

 I løpet av denne måneden vil jeg dele mine erfaringer, tanker og selvsagt oppskrifter.

Mine refleksjoner

Mine refleksjoner i startgropa er at dette kan da ikke være så vanskelig. Jeg forestiller meg at det ikke skal være så vanskelig å kutte ut mye kjøtt, fjærkre og fisk og jeg tror heller ikke det skal være så vanskelig å spise mer grønnsaker, frukt og bær.

Det er imidlertid to områder jeg tror kan bli litt utfordrende. Det ene er å få spist nok bønner, linser og belgfrukter. Anbefalingen er ca. 125 gr tørre bønner, linser og belgfrukter pr. dag. Med utgangspunkt i at vekten dobles ved bløtlegging og koking, er dette ganske mye bønner. Den andre utfordringen er at jeg pleier å bruke mye egg og meieriprodukter i vegetaroppskriftene mine for å tilføre protein. Det kan jeg ikke gjøre denne måneden, for mengden av disse varegruppene er også begrenset.

EAT vs Folkehelseinstituttet

Sammenlignet med de offisielle kostholdsrådene fra Helsedirektoratet, er det lite som krasjer direkte. Det eneste punktet jeg ser det er direkte motstridende råd, er når det gjelder fisk. I Planetary Health dietten, anbefales det å begrense inntaket til ca. 200 gr pr. uke, mens de offisielle rådene anbefaler 2-3 fiskemåltider i uken og gjerne fiskepålegg i tillegg. Tilsammen vil det bli langt mer enn de 200 grammene.

Hva forventer jeg at resulatet skal bli?

Som et direkte resultat av denne utfordringen forventer jeg at jeg oppdager noen nye råvarer, oppskrifter og tilberedningsmetoder. Her blir jeg dyttet litt ut av komfortsonen og må nok finne på noe nytt for at det ikke skal bli et kjedelig kosthold.

Når det gjelder min egen helse, så tror jeg ikke at det vil bli de helt store effektene. Vi har allerede et godt og variert kosthold. Men det kan jo være lov å håpe at et par kilo forsvinner…

Når det gjelder miljøet, vil jeg jo ikke se noen direkte endringer av vår måned med dette kostholdet. Men vi vil jo definitivt ha et langt lavere forbruk av kjøtt, fisk og fjærekre, noe som selvsagt vil gi et mindre fotavtrykk på kloden.  Bidraget fra vår lille familie vil jo ikke akkurat gjøre vei i vellinga, men tanken er jo at det ikke bare er oss som skal gjøre det.

Ideelt sett burde nok det lille vi spiser av animalske proteiner komme fra bærekraftige systemer som står for god dyrevelferd. Dette synes jeg er et temmelig vanskelig og uoversiktlig tema. Derfor vil jeg i denne utfordringen legge følgende prinsipper til grunn. Fisken vi spiser skal være villfisk og fra bærekraftige bestander. Kjøtt og fjærkre vi skal spise kan komme fra to kilder. Den ene kilden er fryseren vår. Tanken bak dette er at maten allerede er kjøpt inn og det må jo være bedre å spise opp den maten man har, enn å kjøpe ny. Resten vil jeg kjøpe i min lokale dagligvarebutikk mens jeg forsøker å bli litt klokere på dette temaet.
