Fylte paprikaer er en favoritt på middagsbordet hjemme hos oss. Så denne uken bestemte jeg meg for å lage en vegetarvariant av den kjære retten. At familiens yngre garde tok i mot middagen med stående ovasjoner er nok å ta litt hardt i, men vi voksne synes det var riktig så godt.

Når jeg lagde retten, tok jeg utgangspunkt i hva slags grønnsaker jeg hadde i huset og hva som måtte brukes opp. Jeg fant noen ganske myke tomater og sjampinjonger, som smatt oppi gryta sammen med løk og hvitløk. Men her kan nok mange slags grønnsaker passe; aubergine, squash, blomkål, paprika, gulrøtter og selleri bare for å nevne noen. Quinoa smaker ikke så mye i seg selv, så her er det bare å kjøre på med andre smaker fra grønnsaker, urter og krydder. Jeg tilsatt også to forskjellige oster for å gjøre retten mer mettende og tilføre mer smak.

Ingredienser

  • 4 paprikaer
  • 1 stor løk
  • 2 fedd hvitløk
  • 3 store sjampinjonger
  • 2 ss olivenolje til steking
  • 4 store tomater
  • 4 dl vann
  • 1/2 grønnsaksbuljong
  • 1 ss finhakket fersk oregano, eller 2 ts tørket
  • 1 ss finhakket persille
  • 2 dl ukokt quinoa
  • salt og pepper
  • 2 dl revet parmesan
  • 8 tykke skiver Jarlsberg

Fremgangsmåte

  • Sett ovnen på 190 grader (varmluft).
  • Finhakk løk, hvitløk og sjampinjong og fres det til løken har blitt myk og falt sammen.
  • Hakk tomatene i terninger og ha det oppi gryten sammen med løkblandingen.
  • Tilsett vannet, buljongen, urtene og quinoaen. Kok som angitt på pakningen.
  • Når det er ferdigkokt, trekk til side og rør inn parmesanen.
  • Del paprikaene i to og legg dem i en lett smurt form.
  • Fordel quinoablandingen oppi de halve paprikaene og legg en osteskive oppå hver.
  • Stek i ovnen i ca. 30 minutter til paprikaene har blitt myke og osten har smeltet og bobler fint.

Server varme eller romtempererte med blandet salat og gjerne godt brød ved siden av.
