JUNI – dersom jeg måtte velge meg en grønnsak og leve med den resten av livet ville jeg høyst sannsynlig valgt tomaten. For så glad er jeg i den. Jada, jeg vet jo at tomat strengt tatt ikke er en grønnsak, men det lar jeg ligge nå. Poenget er uansett at tomater er veldig godt, og jeg tror at jeg spiser tomater i en eller annen form nesten hver eneste dag hele året. Men ekstra stas er det selvsagt nå på sommeren når tomatene faktisk er i sesong og de smaker herlig, søtt og friskt på en gang. Og så er jo tomatene så utrolig allsidige. De kan spises rå, kokes, bakes, stekes, syltes. De kan spille hovedrollen, eller birollen. Her har jeg samlet mine 5 beste oppskrifter med tomat og jeg har styrt helt unna spagetti.

 

Confiterte cherrytomater

Først ut kommer disse confiterte cherrytomatene. En tur i ovnen med litt olivenolje, salt. pepper og hvitløk gjør disse til en veritabel smaksbombe. Selv tomater som ikke er supersmakfulle blir gode på denne måten. Og de kan brukes til mye. Server dem som tilbehør til middagen, legg dem på en brødskive, eller bruk dem som en ingrediens i en annen rett.

Gazpacho

Denne spanske klassikeren er rett og slett vidunderlig når det er skikkelig varmt og man kanskje ikke orker så mye å spise. Da er denne suppen rett og slett genial, full av tomater og andre grønnsaker som den er. En liten slant med sherryeddig gjør at den får akkurat det lille syrlige stinget som gjør suppen helt uimotståelig.

Egg i skjærsilden

Dersom du er ute etter en kjapp middag, eller en velsmakende lunsj kan du jo prøve deg på egg i skjærsilden. Det er rett og slett egg som er kokte i en heit tomatsaus. Hvor hett det skal være i skjærsilden bestemmer du selvsagt selv ved å justere chiilimengden. Godt blir det uansett.

Tomatrisotto

Jeg er svært glad i risotto og denne varianten med tomater er ikke noe unntak. Ved å bruke smaksrike cherrytomater får risottoen en fyldig tomatsaus. Topp gjerne med confiterte tomater på toppen og du har en super «primo piatti» (forrett) eller en deilig lunsj.

Det enkle er ofte det beste er det et slagord som sier, og det kan man godt si om denne også. Å kalle det en oppskrift er kanskje å trekke det litt langt, men dette er rett og slett så godt at det måtte med på listen min. De søte og saftige tomatene kler den salte fetaosten helt perfekt. Det er rett og slett en sublim kombinasjon.

Fun fact om tomat

Det norske navnet kommer fra spansk via fransk og tysk, men spanjolene tok det fra aztekernes ord for grønne tomater som var tomatl. De fleste europeiske språk har dermed en eller annen variant av det aztekiske navnet, men ikke italienerne. De kaller nemlig tomaten for pomodoro som betyr gyllen frukt/eple.
