Når jeg er ute å reiser kjøper jeg ofte med meg en kokebok som souvernir. Å kunne gjenskape maten fra et sted hjemme på kjøkkenet kan på et øyeblikk ta meg tilbake. Det er en herlig måte å besøke et land på på nytt. For over 25 år siden bodde jeg en kort periode i India, og med meg hjem hadde jeg en kokebok. Boken er nok laget for utlendinger, men jeg mener allikevel at oppskriftene gir nokså autentiske smaksopplevelse. De fleste av oppskriftene har veldig mange ingredienser, men det er forholdsvis vanlige ingredienser som mange har allikevel. I denne oppskriften er det kanskje gurkemeie, garam masala og svart kardemomme som er litt eksotiske, men svart kardemomme kan fås i velassorterte invandrerbutikker og de to andre krydderene finnes i de fleste dagligvareforretninger. Får du ikke tak i svart kardemomme er det ingen katastrofe. Bruk litt mer av de grønne kardemommekapslene.

Til tross for at det er mange forskjellige ingredienser, er denne retten nokså enkel å lage. Men for en herlig duft som sprer seg i kjøkkenet etterhvert som løken og krydderene blir varme. Til slutt dufter det rett og slett vidunderlig. Det er også en fantastisk varmende rett som passer ypperlig på hustrige høstdager, eller kalde vinterdager. Så, ikke la deg skremme av den lange ingredienslisten.

Ingredienser

  • 4 ss rapsolje
  • 2 mellomstore løk
  • 4 hvitløkfedd
  • 8 nellikspiker
  • 1 kanelstand (5 cm)
  • 10 pepperkorn
  • 2 svarte kardemommer
  • 5 grønne kardemommekapsler
  • 2 ss tomatpure
  • 2 tomater
  • 15 gr revet ingefær
  • 1 ss sitronsaft
  • 8 kyllingklubber
  • 1 ts gurkemeie
  • 1 ts chilipulver
  • 4 ss yogurt naturell
  • 3 dl varmt vann
  • 1/s ts salt
  • 1 ts garam masala
  • 3 dl yogurt naturell
  • 2 ss finhakket frisk mynte
  • 1 ts sukker
  • 1/2 ts salt
  • 1/2 slangeagurk

Fremgangsmåte

  • Finhakk løk og hvitløk og skjær tomatene i mindre biter.
  • Varm oljen i en gryte og stek løk, hvitløk, nellikspiker, kanel, pepper og kardemomme til det har blitt gyllenbrunt.
  • Tilsett tomatpure, tomater, ingefær sitronsaft, kylling, gurkemeie og chilipulver. Bland godt og la det småkoke i 15 minutter på lav varme.
  • Bland yogurt, vann og salt og rør det inn i kylling-krydderblandingen.
  • La det småkoke i 30 minutter til eller til kyllingen er helt mør.
  • Dryss over garam masala. Mens kyllingen putrer i gryta, lag raita.
  • Skrell agurken og ta ut den myke kjernen i midten. Skjær i tynne skiver.
  • Bland yogurt med salt, sukker og mynte og rør inn agurken til slutt. Server kylling curryen med naan eller ris, raita og stekt spinat.
