Fler og fler innfører en vegetarisk dag i kalenderen sin. Det synes jeg er flott. Grønnsaker er godt, billig og sunt. Så det er i grunn ingen grunn til å ikke kjøre på med grønnsaker. Her kommer oppskrift på en kjempegod og kjapp suppe som passer godt både til lunsj og middag.

Gulrøtter har en mild og søt smak, og uten «hjelp» fra andre ingredienser kan gulrotsuppe fort bli litt kjedelig og anonym. I denne suppen er det imidlertid rikelig med ingefær, limejuice og kokosmelk som gjør at suppen allikevel får karakter. Ingefæren gjør at suppen blir varm og limen letter opp smaksbildet. Kokosmelk får man i både lett- og helmelksvariant, og i denne suppen foretrekker jeg å bruke helmelksvarianten. Det gir suppen en bedre fylde og metter litt mer.

Hjemme hos oss setter Lillemor ned foten for chili. Jeg prøver å snike det inn i mange retter, men hun kjenner det med en gang. Selv om jeg og resten av familien nesten ikke kjenner chilien i det hele tatt. Derfor er det ikke chili i oppskriften nedenfor, men det kunne godt vært litt. Det ville forsterket det asiatiske preget og passet godt til de andre smakene. Så har du lyst på litt ekstra sting, anbefaler jeg å tilsette en hakket chili også.

Ingredienser

  • 1 liten løk
  • 1 "tommel" med ingefær
  • 2 fedd hvitløk
  • 2 ss rapsolje
  • 6 store gulrøtter
  • 1 l vann
  • 1 terning grønnsaksbuljong
  • 1 boks kokosmelk
  • saften fra 1 lime

Fremgangsmåte

  • Hakk løk og hvitløk. Riv ingefær på den fine siden av rivjernet. Skrell gulrøttene og skjær dem i biter.
  • Varm oljen i en gryte og fres løk, hvitløk og ingefær på middels varme til det har blitt mykt, men pass på at det ikke blir brent.
  • Ha i gulrøttene og vannet. Kok opp og tilsett buljongterningen. La det koke til gulrøttene er helt møre.
  • Tilsett kokosmelken og kjør alt glatt med en stavmixer, eller i en blender.
  • Kok opp og smak til med limesaft og juster evt. med litt mer salt.

Server med ris eller godt brød ved siden av. Vel bekomme.
