Det er ingen hemmelighet at jeg er veldig glad i asiatisk mat, og kanskje særlig thailandsk mat. Det er bare rett og slett så sable godt, nesten alt de lager der. Smakene er friske og rene og jeg føler meg alltid mett og lett på samme tid etter et thaimåltid. Kylling med cashewnøtter må være en av de vanligste rettene man får servert. Den finnes i hvert fall på nær sagt enhver liten restaurant i Thailand. Det er kanskje ikke royal cuisine eller gourmet, men hvem bryr seg vel om det. Ikke jeg i hvert fall.

Ingredienser

  • 1 ss brunt sukker
  • 1 ss soyasaus
  • 1 ss kejap manis
  • 1 ss fiskesaus
  • 1 ss vann
  • --
  • 1 dl cachewnøtter
  • 500 gr kyllingbryst
  • 1 liten løk
  • 2 fedd hvitløk
  • 2 ss rapsolje
  • 1-2 chilier
  • 4 vårløk

Fremgangsmåte

  • Bland sammen soyasaus, kejap manis, fiskesaus, vann og sukker og rør til sukkeret har løst seg opp. Sett til side.
  • Skjær løken i tynne båter, chilien i tynne skiver og finhakk hvitløken. Skjær kyllingen i tynne skiver/strimler. Skjær vårløken i ringer.
  • Varm opp oljen i en wok eller stekepanne og stek nøttene til de har blitt gylne. Ta ut nøttene og legg dem over på et kjøkkenpapir slik at oljen kan renne av.
  • Fres løk og chili i oljen til det er mykt. Rørestek kyllingen sammen med løken. Når kyllingen er nesten gjennomstekt has vårløken og nøttene oppi og sausen helles over. Bland godt og stek til kyllingen er helt gjennomstekt.

Server med kokt ris. Vel bekomme.
