Dette er en skikkelig vintersuppe. Den er proppfull av gode ting. Suppen er kremet, krønsjy, smaker herlig og inneholder masse som er godt for en vintertufs kropp. Jeg har gått og hanglet i en god stund nå, og prøver derfor å fylle på med masse grønnsaker for å se om det kanskje kan hjelpe. Dette er en grønn suppe som først og fremst får den nesten smaragdgrønne fargen fra spinaten som er i suppen.

Suppen inneholder i grunnen mest grønnkål, men fordi den koker en stund mister den litt av sin spenstige grønne farge. Spinaten derimot som has i helt til slutt forblir irrgrønn. Karamellisert løk bringer litt sødme til suppen uten at det blir for mye, og en liten skvis sitron gir en friskhet.  Her er det med andre ord mange elementer som er med på å gi en fenomenal suppe.

Suppen har en litt kremet, fløyelskatig konsistens til tross for at det ikke er noe fløte eller andre meieriprodukter i den. Det skyldes at jeg har tilsatt litt ris, som når suppen kjøres glatt gir en viss fylde. Suppen er altså helt vegansk, om du velger å droppe creme fraichen som jeg brukte ved servering.

Ingredienser

  • 1 løk
  • 2 fedd hvitløk
  • 2 ss olivenolje
  • 1 l vann
  • 3 ss arborioris
  • 1/2 ts salt
  • 200 gr grønnkål
  • 1 ss sitron
  • 2 ss solsikkekjerner
  • 1 ts olivenolje
  • 100 gr spinat
  • 2 ss creme fraiche

Fremgangsmåte

  • Skjær løken i tynne strimler og finhakk hvitløken.
  • Stek løken i olivenoljen på middels varme i 10 minutter. Tilsett 2 ss vann, reduser varmen og legg på et lokk. La løken godgjøre seg i 10 min til. Den skal da være karamellfarget og helt myk.
  • Mens løken steker kok opp vannet i en gryte. Tilsett salt og risen og la det koke i 15 minutter.
  • Vask grønnkålen og skjær bort den harde midtstilken. Ha grønnkålen oppi risvannet og kok i ytterligere 10 minutter.
  • Stek solsikkefrøene i litt olivenolje til de har fått farge og blitt sprø. Legg over på et papir slik at overskytende olje blir sugd opp.
  • Tilsett spinaten og løkmarmeladen i suppen og la det koke i 3 minutter.
  • Kjør suppen helt jevn med en stavmixer.
  • Smak til med sitronsaft, og evt. mer salt.

Server rykende varm med creme fraiche, ristede solsikkekjerner og evt. litt god olivenolje. Vel bekomme.
