Har du lyst på noe lett og friskt etter julens mange tunge måltider? Det hadde i hvert fall jeg, og asiatisk mat er en perfekt kontrast til all tradmaten. Derfor lagde jeg en pomelo og rekesalat med sterk inspirasjon fra Thailand. Og det må jeg bare si; denne salaten har alt. Den er søt, salt, bitter, frisk, har krønsj og en skikkelig snert. Har du ikke spist pomelo tidligere, er den definitivt verdt et bekjentskap. Den ser ut som en forvokst grapefrukt, og som grapefrukten er den også litt bitter, men også søt og frisk. Den har et skikkelig tykt skall og seige hinner som ikke skal spises. Det er derfor litt jobb med å rense den, men det er absolutt verdt det.

Rekene er jo også søte, og står smaksmessig veldig godt til pomeloen. Urtene gir salaten et nesten litt parfymert preg mens peanøtter og ristet kokos gir krønsj. Dressingen binder salaten sammen og gjør dette til et flott måltid.

Pomelo og rekesalat kommer definitivt fra Sør-Østasia, men om den kommer fra Thailand eller et av nabolandene tør jeg ikke si helt sikkert. Godt er det i hvert fall, og en kjærkommen avveksling fra rotgrønnsaker, svinekjøtt og all slags kokt mat. Denne gir faktisk løfter om at det kommer en sommer med varmt vær.

Det er en lang ingrediensliste, men ikke la deg skremme. Alt kan fås i en vanlig dagligvarebutikk. Pomelo er riktignok en sesongvare, men på denne tiden av året er den altså tilgjengelig.

Ingredienser

  • 500 gr reker med skall, eller 200 gr ferdig pillede reker
  • 1 pomelo
  • 1 sjalottløk
  • 1 neve usaltede peanøtter
  • 1 neve koriander
  • 1 neve mynteblader
  • 2 ss kokosmasse
  • 1 lime, saften
  • 1 ss fiskesaus
  • 1 ss rapsolje
  • 1 ts sesamolje
  • 2 ts sukker
  • 1 fedd hvitløk
  • 1 ts revet ingefær
  • 1 liten rød thaicili

Fremgangsmåte

  • Skrell pomeloen og fjern alle hinner. Del i grove biter.
  • Rist kokosmassen i en tørr stekepanne.
  • Bland limesaft, fiskesaus, oljer og sukker sammen. Ha oppi hvitløk, chili og ingefær og sett til side.
  • Pill rekene.
  • Grovhakk peanøttene.
  • Riv koriander og myntebladene av stilkene.
  • Anrett pomelo, reker, urter og nøtter på et fat, og hell over dressing og ristet kokosmasse.
