Helt fra jeg var liten har gratinert blomkål med pølsebiter eller bacon vært en av mine sommerfavoritter. Jeg kan ikke sette fingeren på hva det er, men den milde blomkålen, den myke ostesausen og det røkte kjøttet er rett og slett en «winning combination» for meg. Dette er en grateng i aller enkleste form. Her er det ingen stivpiskede eggehviter som skal gjøre sausen ekstra luftig eller et stort utvalg av sære ingredienser. Og det er kanskje akkurat derfor den appellerer så sterkt. Dette er en rett det er fort gjort å slenge samme i sommervarmen. Blomkålen kokes, hvit saus lages og pølsebiter skjæres og alt legges i samme ildfaste fat og voila, en deilig rett er snart på bordet.

Her har jeg valgt å legge pølsebitene i formen sammen med blomkålen, men alternativt kan pølsebitene stekes ved siden av og has over ved servering, eller pølsene kan legges på grillen og serveres ved siden av. Ikke glad i pølser. Bruk bacon i stedet eller dryss med hakkede, ristede nøtter for en vegetarisk variant. Bruk også gjerne  gratengen til spekemat i stedet for potetsalat.

Jeg vet mange bruker å koke blomkålhodet helt, og eventuelt bare ta ut stilken. Men siden jeg er en smule utålmodig har jeg ikke tid til å vente på at hele hodet skal bli kokt og derfor skjærer jeg det opp i litt store buketter. Det ser kanskje flottere ut å servere hele hodet med saus over og pølser rundt, men her lar jeg altså klokken bestemme og går for en oppkuttet variant. Godt blir det uansett.

Ingredienser

  • 2 blomkålhoder
  • 800 gr røkt kjøttpølse
  • 50 gr smør
  • 3 ss hvetemel
  • 5 dl lettmelk
  • 1/2 ts salt
  • nykvernet pepper
  • litt revet muskat
  • 200 gr revet Jarlsberg

Fremgangsmåte

  • Del blomkålhodene i buketter, og kok dem knapt møre i lettsaltet vann.
  • Hell av vannet og la blomkålen renne godt av seg.
  • Samtidig lages hvit saus ved å smelte smøret og røre inn melet. Spe med melken og rør så det blir en glatt saus. Tilsett salt og smak til med pepper og muskat.
  • Kok i 5 minutter. Ha i halvparten av osten.
  • Legg blomkålen i et smurt ildfast fat sammen med pølsebitene.
  • Hell over ostesausen og dryss resten av osten på toppen.
  • Stek i ovnen på 220 grader i ca. 20 minutter, eller til sausen har blitt pent brun.

Server med kokte nypoteter og en frisk salat ved siden av.
