Jeg kan ikke annet enn å si at denne fudgen smaker helt herlig. Dersom du liker karameller og lakris, bør du definitivt sterkt vurdere å lage disse. Jeg skal ikke si at fudge med lakrissmak er sterkt vanedannende og dermed burde forbys, men jeg har en sterk mistanke om at de vil forsvinne temmelig fort om jeg ikke skynder meg å gjemme dem frem til jul.

Jeg bruker alltid et sukkertermometer når jeg lager karameller og fudge. Da slipper jeg å lure på om massen er kokt lenge nok, eller om den trenger litt til. Og da vet jeg at resultatet blir akkurat sånn som jeg vil ha det, hverken for seige eller for harde. Et sukkertermometer er en ganske rimelig investering, så har du det ikke ville jeg ha kjøpt et. Både karamellen og fudge koker jeg til det har 120 grader. Da blir de slik jeg liker dem.

I denne fugden er det lakrispulver og glykosesirup. Disse har jeg kjøpt i Sverige, men det skal være mulig å få tak i det her hjemme også. Lakrispulver har de i mange helsekostforretninger, i nettbutikker og også noen velassorterte dagligvarebutikker. Glykosesirup skal også være mulig å få i litt større butikker, hvis det viser seg å være vanskelig kan du bruke glyserol fra apoteket i stedet.

Ingredienser

  • 3 dl kremfløte
  • 400 gr sukker
  • 50 gr smør
  • 4 ss glukosesirup
  • 4 ts lakrispulver
  • 150 gr hvit sjokolade

Fremgangsmåte

  • Kok opp fløte, sukker, smør og glukosesirup i en tykkbunnet kjele på middels varme.
  • Hakk sjokoladen i småbiter.
  • Kle en form som er ca. 20 x 20 cm med bakepapir.
  • La det småkoke til det når 120 grader.
  • Trekk kjelen til side og rør inn sjokoladen og lakrispulveret.
  • Hell massen over i formen og sett kjølig¨.
  • Når massen har blitt kald, skjær da opp i biter.

Oppbevares kaldt og på hemmelig sted om du vil ha noen igjen til jul.
