En av mine faste førjulstradisjoner er å koke karameller. Det har jeg gjort nesten hver eneste desember siden jeg var i tidlig tenårene. Oppskriftene har vært mange og resultatene ymse opp gjennom årene. Alt fra skikkelig klissete plombeuttrekkere til nesten stein harde tannknusere. Men en gang i mellom blir de helt perfekte og da er det ingen ting som er bedre. Vel smaken er den samme gode hver gang, det er konsistensen som kan variere. Det kommer an på koketiden. Kokes de for kort blir de ikke harde nok og for lenge så blir de for harde. Men uansett resultatet, det blir liksom ikke skikkelig jul uten disse søtsakene.

Jeg har eksperimentert med mange slags oppskrifter, men har kommet til at alle gode ting er tre – tre desiliter av tre ingredienser. That’s it. Og selvfølgelig en god porsjon tålmodighet. Både når det gjelder koking og ikke minst når det gjelder innpakning av hver enkelt karamell etter at de har stivnet.

Jeg lager gjerne dobbel porsjon, slik at jeg kan gi bort noen også. Det er som regel alltid populært. Med dobbel porsjon øker koketiden noe, men sett på litt koselig julemusikk og sørg for selskap på kjøkkenet, så gjør ikke det så mye.

Ingredienser

  • 3 dl fløte (1 kartong)
  • 3 dl lys sirup (1 beger)
  • 3 dl sukker

Fremgangsmåte

  • Hell alle ingrediensene i en tykkbunnet gryte. Jeg pleier å bruke en jerngryte.
  • Kok opp og la det småkoke ca. 1 time. Koketiden kan variere med hvor stor gryte du bruker, hvor tykk bunnen er og hvor stor porsjon du lager.
  • Rør av og til i gryten.
  • Når karamellmassen har skiftet farge til gylden karamellbrun og boblene blir større, begynner karamellen å bli klar.
  • Har du termometer blir karamellene passe mye om du lar det koke til 120 grader. Lar du det bli et par grader varmere, blir karamellene harde. Har du ikke sukkertermometer, så fyll ett glass med kaldt vann og ta litt karamellmasse på en teskje som dyppes i det kalde vannet. Dersom man kan forme en kule av massen er den ferdig.
  • Når den er ferdig kokt has karamellmassen over i en liten form kledd med bakepapir. La det stivne natten over og skjær i passelig store biter.
  • Hver bit pakkes så inn i cellofanpapir eller bakepapir.
