OK, jeg innrømmer det – jeg er suppoman. Suppe er noe av det beste jeg vet. Jeg kan spise det til alle døgnets tider, både varme og kalde og eksklusive og enkle. Og av alle de gode suppene jeg spiser er fersk kjøttsuppe en av mine absolutte favoritter. Fersk kjøttsuppe er enkel å lage og kan stå og trekke på platen mens man gjør helt andre ting som å gå en skitur eller bake julekaker. Dessuten varmer den så godt når man kommer inn etter å ha vært ute en kald vinterdag.

Ingredienser

  • 800 gr. høyrygg eller bog av okse
  • 2 l vann
  • 4 ts salt
  • 3 gulrøtter
  • 5 poteter
  • 1/2 sellerirot
  • 1 purre
  • laurbærblad
  • pepper

Fremgangsmåte

  • Kok opp vann, salt og laurbærblad i en stor kjele.
  • Skyll kjøttet i kaldt vann. Ha kjøttet i det kokende vannet.
  • Skru ned temperaturen slik at det kun syder. Ta av skummet som danner seg på toppen. Jeg synes det er greit å bruke en fiskespade, men en skje gjør sammen nytten.
  • La kjøttet trekke i et par timer på lavere varme.
  • Skjær alle grønnsakene i terninger på ca. 1x1 cm og purrren i skiver på ca. 0,5 ca.
  • Ha potetene, gulrøttene og sellerien i suppen og la det koke med i ca. 20 minutter.
  • Ha i purren og la det koke i ytterligere 5 minutter.
  • Ta kjøttet opp og skjær det i terninger og ha det tilbake i suppen.
  • Dryss over pepper.

Server straks med f.eks flatbrød til.
