Tex-mex mat er alltid populært, og disse enchiladaene var ikke noe unntak. Jeg må nok innrømme at ikke alle kjøttfrie måltider er like populære, men dette skled ned på høykant. Trolig ikke på grunn av bønnene, men nok heller på grunn av smeltet ost, guacamole, «tacokrydder-smak» og tomatsalsa. Det er jo en superblanding de fleste liker.

En gang for «hundre år siden» leste jeg the Great Gatsby. Nå husker jeg ikke så mye av handlingen lengre bortsett fra at det var mye festing der, men én ting husker jeg veldig godt- Det er at hovedpersonen hadde et favorittuttrykk og det var «the whole enchilada». Fritt oversatt mener jeg å huske at det må ha betydd noe sånn som «hele sulamitten», og at det kom av at en enchilada består av så mye forskjellig.

Det er ingen faste regler for hva en enchilada skal inneholde, men når den er kjøttfri metter bønner godt og tomater, løk og hvitløk gir en god smak. Ut over det er det bare å bruke det man har for hånden. Jeg hadde en halv purre og litt squash som jeg finhakket og hadde oppi. Bruk det du har som du tror vil passe. Det kan være paprika, sopp, mais, rotfrukter eller noe annet. Når det gjelder krydder i meksikansk mat er det chili, spisskummen og oregano som gjelder. Disse må etter min mening med for at det skal smake meksikansk. Jeg innser at ingredienslisten er fryktelig lang, men det gjør ikke dette til en komplisert rett å lage. De fleste krydderne er ganske vanlig å ha i krydderhyllen, og er det noe som mangler er det nok ikke så nøye, tenk om du kan erstatte med noe annet. Og når det gjelder grønnsakene, så er det som sagt fritt frem for å bruke det som finner i kjøleskapet. Ikke la deg skremme, for dette er snadder – og sunt er det også.

Dersom du har god tid kan du gjerne lage tacolefsene selv, men har du dårlig tid slik jeg hadde i dag, er det helt OK å bruke kjøpte også. Men bruk gjerne grove lefser. De vanlig fine lefsene er som loff å regne. Det passer kanskje fint i helgene, men til hverdags er det greit å bruke grovbrød, synes jeg.

Ingredienser

  • 2 ss rapsolje
  • 2 ss hvetemel
  • 2 ss chilipulver
  • 1 ss paprikapulver
  • 1 ss røkt paprika
  • 1/2 ss hvitløkpulver
  • 1/2 ss spisskummen
  • 1/2 ss oregano
  • 1 ts salt
  • 5 dl grønnsaksbuljong
  • --
  • 1 boks svarte bønner
  • 1 boks kindeybønner
  • 1 løk
  • 2 fedd hvitløk
  • olje til steking
  • 1/2 purre
  • 1/4 squash
  • 2 tomater
  • 2 dl vann
  • 1 ts hvitvinseddik
  • 2 ss enchiladasaus
  • nykvernet pepper
  • 1/2 ts salt
  • 1 rød chili (valgfritt)
  • --
  • 6-8 tacolefser
  • --
  • 3 never revet ost

Fremgangsmåte

  • Forvarm ovnen til 225 grader. Begynn med å lage sausen.
  • Varm oljen i en liten gryte. Når den har blitt varm men ikke rykende, has melet oppi. Stek i ca. ett minutt under omrøring.
  • Ha alle krydderene i og stek i ytterligere ett minutt.
  • Ha i buljongen litt etter litt og la det koke i 10-15 minutter på svak varme. Rør av og til så det ikke setter seg ved.
  • Finhakk grønnsakene. Ha litt olje i en stekepanne og fres løk og hvitløk til det har blitt mykt.
  • Hell bønnene i et dørslag og skyll godt av all laken. Ha dem i stekepannen sammen med løken og la det surre litt.
  • Knus med en potetmoser eller gaffel. Det kan godt bli grove biter.
  • Tilsett resten av ingrediensene. La alt småputre 5-10 minutter. Smak til med salt og pepper.
  • Smør en ildfast form.
  • Fordel fyllet på tacolefsene og rull dem sammen til pølser som legges tett inntil hverandre i formen.
  • Hell over litt saus og dryss over ost. Gratinér i ovnen til osten har smeltet og blitt gyllen. Server varme med resten av sausen, guacamole og tomatsalsa.
