I anledning av at hinduer over hele verden feirer Diwali i morgen, disker jeg opp med en indisk kyllingrett, nemlig butter chicken. Dette er definitivt ikke en hverdagsrett. Den er proppfull av masse krydder, fløte og smør som tilsammen gir en varm og spennende smak. Kyllingen blir saftig og mør etter å ha ligget mange timer i en krydret yoghurtmarinade og sausen er fløyelsmyk, innsmigrende og akkurat passe hot.

Det er ikke spesielt vanskelig å lage butter chicken. Ikke la deg skremme av at ingredienslisten er ganske lang. Det meste skal bare blandes sammen. Men vær oppmerksom på at kyllingen skal ligge i marinaden over natten. Det krever med andre ord litt planlegging å få denne retten på bordet. Når den står der vil du imidlertid ikke angre for dette er seriøst godt. Server den med naan, kokt basmatiris og gjerne stekt spinat.

Diwali kalles meget beskrivende også for Festival of Lights. Diwali markerer Lord Rama sin tilbakekomst. Over alt lukkes elektrisk lys og det tennes stearinlys og andre små lamper. Det er vanlig å gi gaver og ute smeller det i fyrverkeri.

Ingredienser

  • 600 gr kyllingbryst
  • 2 dl yoghurt naturell
  • 5 fedd hvitløk
  • 2 ss revet ingefær
  • 1 lime, saften
  • 2 ts koriander, malt
  • 2 ts spisskummen, malt
  • 2 ts garam masala
  • 1 ts paprikapulver
  • 1/2 ts salt
  • --
  • 100 gr smør
  • 1 løk, finhakket
  • 2 ss revet ingefær
  • 2 fedd hvitøk
  • 100 gr tomatpuré
  • 2 røde chili
  • 1 ts sort pepper, hel
  • 1 ts hele korianderfrø
  • 5 kardemommekapsler
  • 1 ts gurkemeie
  • 2 dl kremfløte
  • salt og nykvernet pepper

Fremgangsmåte

  • Bland sammen alle ingrediensene til marinaden og ha det i en zip-lock pose. Legg oppi kyllingbrystene og pass på at de blir helt dekket av marinaden.
  • Sett kjølig over natten.
  • Ta kyllingbrystene ut av marinaden og la den dryppe av. Stek kyllingbrystene under grillen i ovnen (eller på grillen ute) til de er gjennomstekt og gylne på utsiden.
  • Ta kardemommefrøene ut av kapslene og rist dem sammen med hele pepperkorn, korianderfrø i en tørr panne til det begynner å dufte deilig.
  • Ha krydderne i en morter og knus til et pulver og bland inn gurkemeie og chilipulver.
  • Smelt smøret til sausen i en gryte og fres løken til den har blitt helt mykt på middels varme. Tilsett ingefær og hvitløk og stek et par minutter til.
  • Ha oppi tomatpuré, krydderblandingen og chili og la det småkoke noen minutter.
  • Senk varmen og hell oppi fløten og la det putre noen minutter.
  • Smak til med salt og pepper
  • Skjær kyllingbrystene i 4-5 biter og legg oppi sausen.

Server rykende varm med kokt ris, naan og stekt spinat.
