Selv om temperaturen og snødybden ikke akkurat tyder på det, så er det altså vår nå. Derfor smeller jeg til med en skikkelig vårsalat, til ære for de lyse dagene og fuglene som tross alt minner meg om hvilken årstid vi har. Denne salaten virkelig skriker vår. Her er det asparges og reddiker, det er forskjellige salater og urter og enda mer. En grov sennepsvinaigrette topper det hele.

Ekstra vårlig synes jeg det blir når jeg blander forskjellige salater og urter sammen. Da blir det liksom litt sånn, gå ut i hagen og plukke det som gror der. Ha, ha, in my dreams – det er en stund til det skjer, men det er jo lov å drømme da. Jeg har brukt en blanding av ruccola, hjertesalat, feltsalat og bredbladet persille. Men her er det jo bare å bruke det du har, liker og får tak i. Etterhvert dukker det jo også ting opp i hagen og veikanten som kan spises og passer perfekt i en vårsalat som dette. Tenk gjerne at salatene skal utfylle hverandre og gjøre smaksbildet mer interessant. Hjertesalaten gir volum, ruccolaen gir salaten en litt pikant, pepperaktig smak og feltsalaten er mild og god.

Server gjerne med noe godt brød ved siden av. Jeg hadde en liten rest med focaccia fra en påskelunsj. Den skar jeg i tynne skiver og grillet i ovnen før skivene fikk et strøk av et halvt hvitløkfedd og noen dråper god olivenolje.

Ingredienser

  • 4 dl blandet grønn salat (ruccola, feltsalat, hjertesalat)
  • 1 neve urter (bredbladet persille, estragon)
  • 1/2 liten rødløk
  • 4 grønne asparges
  • 4 reddiker
  • 1/2 agurk
  • 10 sukkererter
  • 2 bløtkokte egg
  • 3 ss god olivenolje
  • 1 ss hvitvinseddik
  • 1 toppet ts dijonsennep med hele sennepskorn
  • salt og pepper

Fremgangsmåte

  • Kok eggene til de er bløtkokte (6 min).
  • Skyll all salaten og tørk den godt.
  • Plukk bladene av urtene.
  • Skjær agurk, reddikene og rødløken i tynne skiver.
  • Skjær aspargesen på langs i tynne strimler. Bruk gjerne en potetskreller.
  • Skjær eggene i to
  • Visp sammen eddik og sennep og tilsett oljen og visp alt godt sammen. Smak til med salt og pepper.
  • Legg alt opp på et serveringsfat, eller anrett på to tallerkener.

Server gjerne med godt brød ved siden av.
