Nok en kort uke står foran oss, og det er jo deilig. Og litt vedmodig synes jeg bestandig, for nå er det faktisk ingen offentlige fridager før juleferien. Men vi har jo en lang og deilig sommer foran oss, da.  Jeg merker at det har blitt mye mat og søtsaker disse maidagene og nå melder virkelig lysten og behovet for litt lettere mat seg.

Jeg starter uken med en knallgrønn spinatsuppe, og har du tid og lyst kan du godt bytte ut spinaten med brennelse. Og er du først i gang med å plukke brennelse kan du jo likegodt ta med litt ekstra, for det kan du bruke til lakseformen på tirsdag. Eller omvendt selvfølgelig. Bruke spinat i stedet for brennesle. I hagen begynner urtene (de som har overlevd) å komme opp, og estagonen er fin og frodig. Så den planlegger jeg å ta litt av til deilige posjerte kyllingbryst med saus smakt til med estragon.  I butikkene ser jeg nå at makrellen er kommet, og hvorfor ikke lage en skikkelig sommersalat med poteter og makrell. Dette er litt som en norsk variant av salade nicoise.  Skikkelig godt er det i hvert fall og virkelig en salat å bli mett av.

På fredagen er det so vanlig pizza, og denne gangen blir den skikkelig grønn. Crispy duck er en stor favoritt hjemme hos oss. Og gjør du som jeg og kjøper de flortynne pannekakene ferdig, så er det også en forholdsvis enkel middag også. På søndagen satser jeg på grilling og legger på en svinefilet med asiatiske smaker. Til den serverer jeg en av mine favorittsalater – thaimarinerte grønnsaker. Det avslutter uken på en utmerket måte synes jeg. Ha en flott uke og vel bekomme.
