«Dette var rågodt». Kommentaren kom fra Lillemor som langet innpå. Det er hyggelig å lage middag når den umiddelbare responsen er så uforbeholden positiv. Jeg må straks legge til at resten av familien også synes spagetti med sopp og valnøttsaus smakte fortreffelig.

Oppskriften er hentet fra kokeboken ved navn «Under valnøttreet». Det er en spennende kokebok som tar utgangspunkt i en del råvarer/ingredienser og gir en rekke oppskrifter til hver råvare. Mange av oppskriftene er sterkt inspirert av middelshavsmat. Men det er også retter fra andre deler av verden, som skandinavia, midtøsten og det fjerne østen.  Med noen få og mindre endringer er oppskriften under den samme som i boken. Jeg har bare redusert mengden valnøtter noe og tilsatt litt sitronsaft for å få litt syre i sausen. Sjampinjong har en temmelig mild og nesten litt kjedelig smak, men den lille mengden tørket steinsopp gir veldig mye smak til retten og løfter den til et helt annet nivå, enn om det bare hadde vært sjampinjong i.

Sausen serveres sammen med pasta, enten rørt inn som de gjerne gjør i Italia, eller ved siden av som vi gjør hjemme hos oss. Da kan alle ta så mye, eller lite som de vil.

Ingredienser

  • 50 gr valnøtter
  • 15 gr tørket steinsopp
  • 1 dl kokene vann
  • 200 gr fersk sjampinjong
  • 1 liten gul løk
  • 2 dl matfløte
  • 1 ss sitronsaft
  • salt og pepper
  • basilikumblader
  • revet parmesan

  • Spagetti til 4 personer

Fremgangsmåte

  • Begynn med å knuse steinsoppen og ha den over i en liten skål.
  • Hell det kokende vannet over og sett det til siden.
  • Kok spagettien og imens finhakk løken og rens og grovhakk sjampinjongen.
  • Fres løken i en gryte i et par minutter til den har blitt blank og myk.
  • Tilsett sjampinjongen og la det surre ca. 5 minutter.
  • Tilsett steinsoppen sammen med bløtevannet og rør inn fløten. La det koke 3-4 minutter.
  • Rør inn grovhakkede valnøtter og smak til sausen med salt og pepper.
  • Riv basilikumbladene grovt og ha over sausen.

Server over nykokt spagetti og parmesan ved siden av.
