Et par uker i Italia i sommer ga rikelig med anledning til å forsøke mange gode spagettivarianter. En av dem var Spagetti Amatriciana – det vil si spagetti som i Amatrice. Amatrice er en liten by øst for Roma på provinsgrensen mellom Abruzzo og  Umbria.

Denne retten er et  premieeksempel på god italiensk mat og hva den skal være. Den inneholder svært få råvarer, men til gjengjeld er sluttresultatet fullstendig avhengig av at råvarene har førsteklasses kvalitet. Tradisjonelt skal sausen kun inneholde tomater, løk, hvitløk, bacon eller lardo og chili samt litt olivenolje. Vi fikk noen veldig gode varianter av denne sausen i løpet av ferien og jeg var lysten på å gjenskape den gode smaken hjemme.

Utstyrt med mye tålmodighet gikk jeg i gang. Nok en gang kan jeg bare understreke at førsteklasses råvarer og særlig tomater er helt avgjørende for et vellykket resultat. Selv om tomatene skal være på sitt beste nå, kunne de dessverre ha vært bedre. Jeg brukte ferske tomater som jeg skoldet og forberedte etter alle kunstens regler, men i ettertid tror jeg faktisk at det hadde vært bedre å bruke hermetiske tomater av god kvalitet (ikke de billigste på super’n). For resultatet hadde ikke helt den fyldige, gode tomatsmaken jeg hadde i minne.

Oppskriften er en forrett, eller primi som italienerne sier, til 4 personer. Dersom det skal være hovedretten bør oppskriften dobles. Det gjorde ikke jeg og for å si det slik, så trengte vi definitivt kveldsmat den kvelden.

Ingredienser

  • 2 ss olivenolje til steking
  • 1 pk bacon i skiver
  • 1 middels stor løk, hakket
  • 2 fedd hvitløk, finhakket
  • 500 gr. tomater uten skinn og kjerner, alt. 1 boks tomater
  • 1 chili, finhakket
  • Salt og pepper
  • --
  • Spagetti, bavette eller annen pasta til 4 personer

Fremgangsmåte

  • Begynn med å flå tomatene. Er du usikker på hvordan du gjør det kan du lese om det i denne posten.
  • Skjær tomatkjøttet i terninger og legg til side. Som nevnt over vil resultatet trolig ikke skjemmes av å bruke hermetiske tomater dersom de er av god kvalitet.
  • Skjær baconet i tynne strimler og fres det i en gryte med olivenoljen til det begynner å ta farge.
  • Tilsett deretter løken og hvitløken og la det surre med baconet i ca. 10 minutter.
  • Tilsett deretter tomatene og chilien. La det småkoke på lav varme i ytterligere 40 minutter. Bruker du boksetomater kan du redusere koketiden til det halve.
  • Mens sausen koker, kok opp vann og kok spagettien slik at den blir ferdig samtidig som sausen.
  • Smak sausen til med salt og pepper før servering. Dersom sausen har blitt litt tørr, tilsett litt av spagettivannet.

Oppskriften over er til 4 personer, men det er til en forrett. Dersom det skal være hovedretten bør oppskriften dobles. Det gjorde ikke jeg og for å si det slik, så trengte vi definitivt kveldsmat den kvelden.
